- morkzgSurprisingly soft, subtle, and fruity on the nose. Distinct "green" aromas of kiwi and green grapes, with hints of green apple and green banana too. The palate continues the soft, gentle feel, but with an understated power and depth to the body. Faint sweetness of chestnuts, dairy and steamed rice, with a clean acidity that cuts through and leaves a dry finish. 3.5/5

- morkzgLots of "pink" and tropical aromas that are very clear: bubblegum, strawberry (but like strawberry flavouring), melon, kiwi, pineapple. Herbal hints of coriander and white pepper hidden among the fruit. Soft, juicy, then it comes in with a big punch of astringency that tingles and tightens up the edges of the palate, before softening down and leaving a crisp acid finish. Nose is great, but the palate is a bit much bitter and astringency for me. 2.75/5

- morkzgLovely creamy, fruity aromas like mixed berry yogurt and summer fruits. Some fresh cheese and pistachios, and buttered toast. Delightful on the palate: crisp, soft, smooth with gentle fruit, then a big burst of acid towards the end that cleans up and tightens the palate into a neat finish. Finish is quite dry, but an acidic umami does linger for a while. I love this. 5/5

- morkzgEarthy aromas for this junmai. Some sweet chestnut, mushrooms, rice bran, wholewheat bread and hints of overripe banana. The palate is light, crisp, and dry, with a peculiar astringency. Very faint notes of dried fruits on top of the rice and chestnut flavours. Short, clean finish. 3.5/5 chilled 4.25/5 warm, really expands on the palate. Soft yet full.

- morkzgLots of surprising dairy notes on the nose: whipped cream, can cheese, sour cream, with underlying fresh nuts, green banana and apple. Not your typical daiginjo nose, but not at all unpleasant. Super light and airy on the palate, like thick water. Aerating the sake in the mouth reveals the subtle fruit notes of apple and pear, with some delicate chestnut too. A crisp astringency and acid come through midway to tighten up the palate, and leave a soft, but lingering finish. 3.5/5

- morkzgBold, fruity aromas make themselves known very quickly: pineapple, grapes, ripe peach and nectarine, a whiff of a herb garden, and a hint of fresh nuts. A zippy acidity and juicy bite fill the palate. More stone fruits: peach and nectarine, then taking on a profile of dried fruits and nuts. Finish is clean and refreshing with lingering fruit and a pleasant sugar coat on the lips. Slightly different experience from last time, but still great. 4.25/5

- morkzgVery focused ginjo-ka on the nose. Powerful and aromatic. Apple, pear, bubblegum, pineapple, strawberry. Slightly sweet. Palate is light and crisp. Medium-dry, medium body perhaps. Apple, banana, white grape, cotton candy. Decent acidity, and crisp bitterness. Finish is rather short, light and dry. As a daiginjo it's very typical, but not my preferred style. 3.75/5

- morkzgLovely lactic heavy aromas mixed with juicy fruit: milk, yoghurt, muscat grapes, berries. Like a mixed berry ice cream cake, with underlying umami and nuttiness. Good zippy sweetness upfront which quickly fades into a deeper, dried fruits and umami palate. Acidity is bold throughout and provides a tingly edge, but the finish is not sticky nor very long. Surprisingly light despite the full body and character. Excellent stuff. 4.75/5

- morkzgExcellent light junmai aroma: lots of rice and rice flour-like cereal notes, some milky dairy, and also banana, apple, pear, blueberry fruity notes too. The palate is smooth but comes in with a big punch of acid, before disappearing. What's left is a slightly thin, almost watery finish. Very drinkable, but I think the palate lets this one down a lot. There's nothing after the initial acid, and it feels a bit boring. 2.5/5 for the aroma

- morkzgReally nice fruity edge to this rice-forward nose. There's apple, melon, banana, and a hint of dairy. Like a tokubetsu honjozo. The palate is excellently balanced. Rice and cereal based with some dairy and hints of fruit like the nose. There is also some great umami like mushrooms and chestnuts that fill out the body, but it's still a very clean sip. The finish is elegantly short, but not necessarily dry. This is excellent. 5/5

- morkzgVery focused ginjo aromas of pineapple, bubblegum, lychee, cotton candy, strawberry and blueberry. Maybe some hints of rice and dairy but mostly concentrated, sugary "pink" aromas. On the palate a much different beast. Deep, smooth umami with cereal, chocolate, and hazelnuts. Acidity is well balanced with the rest and does a great job of adding body. The palate finishes short, with a really good clean finish. I think this is a fantastic junmai ginjo. Aromatic yet full bodied and rich. 5/5

- morkzgNuts, prunes, sweet pickles, cloves and cinnamon, and like a leathery aspect like whisky. Sweet at first, then a blast of chocolate and caramel, before zipping away quite quickly for a light finish. Meaty umami age caramel at the end. Much lighter and more palatable than I was expecting. Quite tasty, but not really my usual style. 3.5/5

- morkzgI get lots of stone and orchard fruits on the nose: peach, apricot, nectarine, apple, pear. There's certainly an earthy umami element like mushrooms in there too. Quite big and bold on the palate. The alcohol is a nice punch, and carries a tingly acidity and rich umami, with more nectarine and apricot, some grape, dried fruits. It feels thick and sweet, but has a dry finish. The alcohol continues to tingle for a bit after it's all gone, leaving a slight stickiness on the lips. 4.5/5

- morkzgVery aromatic, but not in the classical ginjo style. Yes there's melon and grape and pear, but it somehow feels different. Soft, with a lactic element perhaps. The palate is very light and smooth. Quite thin and dry on the tongue, leaving a faint sweetness on the tip. Faint nuttiness, gentle umami, and with a fruity vein throughout. A very drinkable, not so typical daiginjo. I like it a lot. 4.25/5

- morkzgDeep, fruity aromas that venture into wine territory. Apple, grapes, raisins, blackcurrant, dried fruits. Sweet and rich on the nose. Palate does have some pungency of alcohol at first but this quickly fades, and forms into a dense, umami forward sake. Mushrooms and chestnuts, with some faint sweetness of dried fruits. This then breaks down into a bitterness like dark chocolate or cacao, then leaves with hints of green apple on the end. A striking, full-bodied sake, rich in character. 4.25/5

Pickles and mushrooms deliver lots of umami laced with a sweet lining like overripe pear and orchard fruits. Very creamy, with good lactic acidity. The finish is acidic with hints of chestnuts, and alcohol tingles at the end. 17-18% but not officially genshu. 4/5

- morkzgBright aromas, with mostly fruit. Green apple, peach, perhaps strawberry, pineapple, lychee, and something like white pepper or basil. On the palate it is much deeper and umami forward. Slight sweetness like dried fruits, grapes, pickles and mushrooms. Finish is quite light and very dry, with fading umami. 3.25/5 a little unbalanced I thought
