こまっちゃんI was looking forward to coming to Iwate and found the matsutake mushrooms from Iwate🍄🟫 finally found some reasonably priced ones at a produce shop‼️I'll have a bowl of this today🍶😁.
The nose has some acidity and alcohol. The mouthfeel is smooth with a hint of sweetness from the rice, and the taste is full and full with a good acidity.
I immediately paired it with grilled matsutake mushrooms. The crispy texture of the fibers and the unique aroma of matsutake mushrooms that escapes through the nose, as well as the sweetness. The nose has a clean, grain-like aroma. In the mouth, it has a smooth texture and a slight sweetness of rice, and the acidity gives it a crisp aftertaste.
Serve with dried flounder. The unique flavor of the fish combined with the acidity made for a refreshing aftertaste. I heated it up afterwards, and it became even more like sake, with more sweetness and spiciness. If anything, I think it goes better with warmed sake.

Let's start with this one. The aroma is slightly sweet on the nose. It has a refreshing acidity in the mouth with a soft umami and a good bitterness. I think it is suitable for a mealtime drink.
I paired it with three kinds of snacks. The first is sanmasuzuke (a local dish of Hokkaido and Tohoku. I think it is best paired with sanmasuzuke, a local dish of Hokkaido and Tohoku, in which green chili peppers, soy sauce, and koji malt are pickled one by one. I started with the seared sardine sashimi. Eat it with a dash of sudachi (a Japanese citrus fruit). The delicious skin, plump texture, and light white meat flavor complement and synergize with the sake. Delicious 😋.
Next, grilled with salt. The fat from the skin of the fish stands out and enhances the flavor of the sake. This is delicious. ‼️
Personally, I think I prefer the grilled version.
