Closed today 💪Choose this one for tonight: 💁‍♂️ Let's start with the nose. The nose has fermented acidity and a hint of fresh fruity notes. The mouthfeel is clean and refreshing, with citrus-like sweetness and acidity, with a hint of ear of rice, and after the umami, a slight bitterness tightens the taste and gives it a final sharpness. First, with salted red clams 🦪. It is almost raw. The strong individuality of the flavor seems to be slightly overpowered by the sake. I also paired it with tuna meat that had been stripped of its threads, and this one is the best 😊(*I didn't take a picture of it, but it's great 💦). Next, I paired it with beef tendon oden.
