ガルスmelon max
Aroma reminiscent of gorgeous melon. Aroma with a firm sweetness and a hint of fragrance that emphasizes the upper end of the aroma. It finishes with a lingering aroma and sweetness.
Very gorgeous, sweet and easy to drink.
★★★★ ガルスCohabitation of opposites
Mild melon-like aroma. The mineral mouthfeel gives the impression of sweet bitterness. The second half of the wine is just as sharp with the same impression.
Although the overall impression is of minerality and bitterness, there is also a gentle aroma and sweetness, giving a sense of balance.
★★★★ ガルスStrawberries that make you think
Mild ginjo aroma. Slightly stronger attack with strawberry-like overtones and acidity. In the latter half, while maintaining the lingering hints of aroma, it finishes with sweet and sour tastes, umami, and a slight bitterness.
Although it has a hint of strawberry, it is complex with sourness, sweetness, and bitterness, making it a sake that makes one think about many things.
★★★★ ガルスfor recording
Lightly cloudy. Thick and sweet, mild and easy to drink.
★★★★ ガルスfor recording
Firm sweetness and mellow overtones. The balance of transparency felt overall was found in spite of this.
★★★★ ガルスfor recording
Freshness, mellowness, and the complexity characteristic of the latter half of the kuheiji.
★★★★★ ガルスfor recording
The aroma is reminiscent of elegant sweetness. It has a clear outline, yet it sharpens with freshness and sweetness.
★★★★★ しんしんSYFound Director Hirotogawa's recommendation at this restaurant.
I had to try it!
Beautiful dark green label
Yamada Nishiki
Delicious 🍈 sake with a hint of melon
Fruity!
I wonder if the green label came from melon?
When we had finished the Hirotogawa, we asked for the final menu item we were interested in!
Curry Nyumen
Served in a Bizen ware bowl!
The aroma of curry is fantastic!
Customers around us also said that the Curry Nyumen looked delicious!
Hot and spicy!
I had a nice conversation with the master about Bizen Pottery when I paid at the end!
It was such a hideaway bar that I want to come back again!
They also stock a lot of sake from the hanpukai!

A limited edition sake brewed by the long-established Matsuzaki Sake Brewery is now in stock. This is a Junmai Ginjo-shu made with Yamadanishiki, a rare sake rice other than Yume-no-Kou in Hirotogawa, and it is a great example of Matsuzaki Shuzo's technology and the individuality of Yamadanishiki.
When the cork is uncorked, a rich, sweet aroma of melon and flower honey wafts through the air. In the mouth, the aroma spreads quickly, and the rich sweetness and umami can be fully enjoyed. T.KISOGood morning, Shinshin SY ☀️
I see you have Hirotogawa river in Okayama too❣️
I'm kind of glad ☺️. しんしんSYGood morning, T.KISO. I found Hirotogawa on the menu and decided to drink it for sure, so I ordered this one to finish off the meal. It is still delicious. しんしんSYIn addition to Okayama sake, there are some master-selected sake from outside of the prefecture on the menu!
Let's try a few of the brands that caught our attention!
Niigata Kenshin Hi Hiyoshi Oroshi!
It's a junmai ginjo, so it's light and fruity, just the way I like it!
This restaurant used to have an all-you-can-drink course, but no longer.
The dishes and appetizers prepared by the master are really delicious!
Following the seafood dish, an assortment of oden was served!
It was getting colder and colder outside, so this dish went well with sake!
A fun night in Okayama!

Kenshin Autumn Sake made with Gohyakumangoku from Niigata Prefecture and No. 9 yeast. Characterized by Kenshin's typical rich breadth and sharp finish. Fruity and beautiful acidity. It has good sharpness and balance. It is even more full-bodied when served at room temperature or warmed to human skin. Enjoy it with autumn flavors.
Ikedaya Sake Brewery is located in Itoigawa City, Niigata Prefecture, the birthplace of jade, which is rare in the world. The brand name "Kenshin" comes from the fact that the brewery is located along the Sengoku Kaido Road, where the Echigo warlord Uesugi Kenshin is said to have sent salt to his enemy, Takeda Shingen. しんしんSYOkayama Sake
From Gozenshu to the next brand
Bamboo grove that I have been interested in for a long time
Karoyaka Ootoro
It is fresher and more fruity than Tenbikuroten!
I'm glad I chose this brand, it's delicious 😋.
I would drink it again if I found it again!
Oysters were on the menu!
Raw or fried?
I had a hard time deciding, but I went for raw!
I had oyster oyakodon for lunch as well, and I really like oysters 😋.

Master says this tastes better heated up!
Then please have it hot for the first time in a long time!
He didn't make it too hot, but just the right amount.
It doesn't have the distinctive aroma of hot sake!
What a gentle flavor and taste!
I had an image of hot sake being dry and assertive, but there was none of that, and it was easy to drink!
I enjoy hot sake with sashimi such as Spanish mackerel, yellowtail and sea bream with a little sweet soy sauce.

The collaboration project "Otoko wa Tsuji Beams" started because the Gozenshu brewery Tsuji Honten was the location for the 48th movie "Otoko wa Tsuraiyo" (Otoko wa Tsuraiyo Beams). This time, we will be releasing a completely original brew based on the image of the main character "Tora-san".
The brewery used Omachi, a strong, vigorous sake grown with less use of pesticides and chemical fertilizers, as the raw material, and adopted Gozenshu's unique Bodaimoto process and "complete fermentation," in which the yeast eats up all the sugar. The sake can be enjoyed at a variety of temperatures, from chilled to heated, to experience the never-ending changes in flavor "like the clouds flowing in the sky. しんしんSYOkayama Sake at this store
Some Gozenshu brands are listed from the beginning!
I didn't come across any Gozenshu until yesterday, so please give me a Gozenshu for my second glass!
1859 Bodhi Hashiro, which I have never had before
Pleasant sourness and sweetness
Bizen Omachi is delicious!
There was a badge on the table of the restaurant that said "Omachisto"!
After all, Okayama is famous for Bizen Omachi!
The fish (I lost the name of the fish) with the roe stewed in it!
The sweet and spicy taste goes well with sake 🍶!
A few words of knowledge
In the age of 2025, Gozenshu aimed to "use all Omachi" and "all Bodeshimoto brewing". Gozenshu 1859" is a pure rice sake that embodies this philosophy. The number "1859" comes from the year 1859, when the history of Omachi sake rice began. We hope that "Gozenshu 1859" will become the new standard for Omachi, and will be the sake of choice for any occasion.

It's not there? That doesn't sound right.
When we called the restaurant, the master apologized and said that the vendor had made a mistake in posting the map on the website.
I don't mind, I'll look at the map on the food log and head there right away.
There is a white gorilla hanging on the building.
We arrived safely!
The sake menu is set up on the table.
I rushed to the table and ordered a Kuroten for my first drink!

We had heard that a new sake had been released recently.

We aim to create a sake with a mild and refreshing aroma, a moderate sweetness and acidity, and a freshness reminiscent of citrus fruits, which goes well with meals. Immediately after opening the bottle, it tastes fresh and juicy with a touch of carbonation, and from the third day after opening the bottle, the carbonation gas is released and the sweetness and umami increase. Please enjoy the changes after the bottle is opened.
