The first Jyushiro 2. It is richer than the Junmai Ginjo next door, and has more umami, acidity, and cleanness. I wonder if the difference is due to the fact that the junmai is unfiltered. I didn't taste either of them, but I wondered what the difference was. I haven't had a sip of either one, but I wondered what the difference was.

This store also stocks Jyushidai. Today, there are two bottles: Sake Mirai and Akaban Yumachi. We selected Akaban Yumachi, which we had never had before. I had imagined the roughness of Yumachi, but it is very smooth and has a mild flavor. Wow, I didn't know that Oumachi could be like this when made by Takagi Sake Brewery. A new discovery. Junmai Ginjo-shu is designed to be enjoyed as a food sake. It is characterized by its taut acidity. It seems to be a representative brand of this Ehime brewery. With this, I have completed the list of local sake from all the prefectures in Japan. Ehime was not so easy to drink. This Ishizuchi was a good sake.
