We finished the day with a safe Kegaraku and Orikarami. It is freshly squeezed. The slight nigori (nigori is a slightly cloudy color) is very nice. The sweetness and acidity are pleasant. Thank you for the sake. Ingredients: Gohyakumangoku Rice polishing ratio: 50 Sake meter: +1 to +2 Acidity: 1.6 Alcohol percentage: 16

This Waseda Enji has a strong relationship with Mine-no-Hakubai Sake Brewery. Three Hishiko varieties to be compared, plus three more to be drunk. This time, the three youngest members of the Gekkoujo series, Sanrai, which competes against the master toji; Shin Ijima, a competing work with the same sake rice of that master; and the big winner, Hishiko Junmai Daiginjo Hiyaoroshi. All are junmai daiginjos. The master's Shin Ijima had the dignity of an adult. Ummm, delicious. Alcohol 15%. Sake degree -3 Acidity 1.4 Ingredient rice: Yamashu No. 4 Polishing ratio 50%.
