[The third drink at Donchaya (Sake Brewery). I was curious about the "Manager's Recommendation" on the sake menu, and when I ordered it, the manager pondered for a while. He asked me, "How about Mai-bijin? I asked him if he would like to order Mai-bijin. Mai-bijin Junmai Ginjo-shu. The aroma of rice with a hint of sourness, the sour aroma of the mouth, the mild umami and richness, the acidity in the back, and the lingering sourness that lingers in the throat and through the nose. The best dish is fried horse mackerel with the flavor of horse mackerel and Mai-bijin's flavor and acidity. Once again, Sake Brewery Donchaya was delicious! We left the restaurant very satisfied, and since we were downtown, we went to a bar that had recently celebrated its anniversary, and went home that day. 🏠️

[The second drink at Donchaya Sake Brewery. After finishing the Katsushikoma Junmai Sake and the side dish, we moved on to the next round of drinks. [The first thing you should order when you come to Don Chaya is the too-thick sashimi platter, it looks impressive 😁. Now, when I looked around the cellar for my second drink, I saw a "mouse", which is rare in Fukui, so I decided on this one ✨. Koshi Junmai Yawaraka Chino Megumi. Neutral rice aroma, soft and mellow sweetness, and a slightly sweet aftertaste. The sweetness and mild umami go well with sashimi 😋.

Hi Pon, ☀☀☀☀☀☀. After this I only showed up for one more 😁. I was on a schedule to catch the last train, no deep drinking as I had been drinking a lot ✨. The sashimi here is totally [chunky], almost just cut the [fence] into thirds 🤣.

[After enjoying SHIMA & COFFEE & SAKE, I left the store and went to Katamachi, a downtown area in Fukui. I went under the curtain hoping to find a seat at the restaurant I was looking for, while feeling the change of stores in the downtown area after a long time, wondering where I should go for dinner. [Sake Brewery Donchaya!] The counter was empty, so we easily entered the restaurant. After checking the menu, we started with this Katsushikoma Junmai Sake. Aroma of rich rice, fruity sweetness with a clean flavor, and a pleasant lingering aftertaste with a unique tangy aroma. The flavor increases as the temperature rises 😁. The owner boldly states that he can get this sake in stock anytime 😲, even though it is one of the most popular sake in Toyama. I wonder how he gets his sake 💦.

I didn't expect to be able to compare two types of "Shinmasa" at the New Year's Eve drinking party. We were all impressed by the "Shinsei No6 R-type" and then the "Flax Cat" was served, so our wallets were already empty 🤣. So we opened the "Shinsei Flaxcat". Of course, it was my first "Flax Cat" 🎉. The aroma of full and clear rice, the carbonation stronger than No6 on the tip of the tongue, the clear and gentle sweetness and acidity, and the crisp and refreshing aftertaste. A bottle to drink under the blue sky! It was a wonderful ending to the year to be able to enjoy two long-sought-after "Shinmasa" 😁. This year, I'm working at night on New Year's Eve, so I'm going to work hard and look forward to the sake I can open at the end of the night shift 😆. Looking back on the year 2023, I made a lot of progress in my sake activities, and I was able to communicate with many people and learn a lot of information about different types of sake, thank you very much 😊. Next year, I would like to continue to immerse myself in the swamp of sake 🤣. Thank you all for your support over the past year! Have a great New Year's Eve!

Continuation of the year-end party at [Don Chaya] with my usual friends ✨ As we were looking for our next drink after opening the "Raifuku", one of my friends asked the owner what he recommended and he said, "We're closing up store for the day, so why don't you open a bottle of this? He brought out a bottle of "Shinmasa" (😲). It was my first "Shinsei No6 R-type" 🎉. The aroma is light, the mouthfeel is tangy and carbonated, the clear umami flows smoothly with a fruity sweetness, and the finish is sharp and deep. As you get used to drinking it, the umami and sweet-sourness become addictive! Is this junmai sake? I was impressed and roared, "This is No6 R-type? Even my friend who is not that good at sake was impressed and willingly drank more sake, which helped me understand the underlying power and popularity of "Shinmasa" 😊. The rich and creamy flavor of the grilled oysters we ordered with our entrée made us happy 😋. When the No. 6 was running low, we were told we could open this one too ✨. We were all unanimous in our decision to order it immediately 🤣.

On December 30, the day before New Year's Eve, we had our annual rice cake pounding event. This time, we put in all the rice left over from the previous year, so we had to pound 30% more rice than the previous year, and it was late in the evening 💦. We were tired, but we were ready to welcome the New Year, so we had a party with our regular drinking buddies to forget the year ✨. After quenching our thirst with Akahoshi at Donjaya, which had a good selection of sake the last time we were here, we shifted to sake, which was the first thing we ordered 🍶. Raifuku Raifuku Bonquet Assemblage. Complex floral rice aroma, gorgeous umami with a full mouthfeel, and a clean, crisp finish with a lingering bitterness that lingers on the tip of the tongue. The initial aroma was unique and initially puzzled me, but as I got used to drinking it, the gentle umami and sharpness kept my appetite going. Just when you think you're off to a good start, here comes the runaway as a way to wrap up the year 🤣.

The restaurant has been full ever since I entered, and this is the last place I had a drink. Mimuro Sugi Junmai Ginjo Dry Taste Aroma of rich rice, a dry taste with a hint of sweetness, and a clean and refreshing short aftertaste. I started to get into a lively conversation with a family from out of town who were sitting in the tatami room behind me, and before I knew it, it had been quite some time since I had entered the restaurant and my train was about to depart. It was fun, but as expected, I drank too much.

Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.

We parted from the couple at "SHIMA," where we stayed for a long time, and when we went outside, the sun was setting and the area was pitch black. We went to "Sake Brewery Donjaya", which had a good selection of sake when we visited there once before, and were seated when a seat became available 🪑. [We started off with a beer since they had a bottle of Akahoshi, then looked over the menu and cellar to order sashimi and sake, and found a bottle of Haneya with a dubious label that Jay & Nobby were drinking the other day. Haneya MOONLIGHT BEAUTY OMACHI No. 10 Yeast Junmai Ginjo. Not much aroma, sweet and fluffy on the palate with a clean and crisp finish. My personal image is that it is sharper than the usual "Haneya", but it has the sweetness that is typical of Haneya. The specialty of this restaurant is the bold sashimi platter. Thick slices of seasonal fish and other items are placed on top of a large amount of ice, making a great impact ✨. It's like shaved ice for sake drinkers 🍧. I was about to leave after having a quick bite, but I got excited with the customer next to me and ended up drinking too much 😅.
