The 800 post anniversary is a special sake🍶. When I went on a tour of a sake brewery with the master of my favorite restaurant, we decided on a sake that is only available at that restaurant: ✨️ The sake is matured, but still has a fresh feeling, with a balance of umami and sweetness. Accompanied by grilled Kyoto red chicken with sansho (Japanese pepper).
