Blending of flavors For the record, as my memory is a little fuzzy. At the second party of a year-end party, I was allowed to open a bottle of 6-year-old Shinmasa specially at the bar where I am a regular customer. Naturally, I could feel the taste of Shinsei, but it still had a freshness that made me feel no sense of time, and from there, I could feel a smooth transition of taste like a fusion of flavors that further united the whole. Concentrated alcohol A rare alcoholic beverage with 30% alcohol content created with new technology. Aroma reminiscent of sourness and alcohol. Enjoy sour taste Compare special junmai and junmai ginjo. Hatsu Tenbi. The aroma is reminiscent of apple-like sourness. From a clean mouthfeel, it has a sour, bitter, and tangy taste, and finishes with a lingering bitter and sour aftertaste. There is no difference except that the Junmai Ginjo has a slightly clearer outline. An interesting sake with mild bitterness and acidity. ★★★★

Vintage Comparison We had the opportunity to compare the different vintages of Ecru. We started with the newer 2022. A clean mouthfeel, strong acidity, and sweetness. Then a complex fruit-like flavor that finishes with a lingering sweetness. Next is 2018, with a mellow mouthfeel, followed by sweet and sour tastes that come together and converge seamlessly with the fruitiness of the flavors. When fresh, each flavor seems to stand on its own, but as time goes by, they seem to blend together to create a sense of unity. It is difficult to say which is better, and both are delicious. ★★★★★

for recording After the first meeting, I went to a sake bar by myself. There were no other customers, so I went to have a chat with the proprietress. I also bought a sake go-around badge for the October 1 Sake Day event. The sake has a sweetness that is typical of Ozeyuki, as well as a clear taste. The taste of Ozeyuki is stable and satisfying. ★★★★

firm and sweet The aroma is subdued. In the mouth, there is a mellow attack derived from nigori, and a white peach-like sweetness fills the mouth along with a sense of freshness. In the latter half, the sweetness is accompanied by a gradual sharpness. In this hot season, I got the impression that it was a little too sweet for me. In winter, this sake would certainly be delicious. Blindly, there seems to be no way to tell that this is 90% polished rice. I was surprised to encounter it again on the same day after having had another Sono Kangiku for the first time at a restaurant before coming here. I was surprised to encounter it again on the same day.
