It's a limited edition Itaru No.7 Yeast Junmai Genshu, freshly brewed.
It seems that 1801 yeast or Niigata G9 yeast is used for the regular Junmai-shu, but I wonder what kind of yeast is used here.

Aoki Shuzo has released a special limited edition saké to break the Corona situation and also to send a cheer to the Olympic Games. It is an exquisitely balanced blend of Junmai-shu brewed with Koshitanrei, Yamadanishiki, Miyamanishiki, Omachi, and Gohyakumangoku, all of which are stored in the "Snow Chamber of the Dr.Tsuru" for long-term maturation. It is an assemblage in wine.
Because the rice polishing ratio is not disclosed, it is treated as ordinary sake.

Magamo Nouhou Takamine Nishiki Junmai Genshu (unpasteurized)
Takamine Nishiki, produced in Sanjo Iguri, Niigata Prefecture, is JAS certified organic, pesticide-free rice grown using the Magamo farming method.
The rice is steamed using the Koshiki steaming method and the Hakko Koji method, and the sake is brewed slowly using long-term low-temperature fermentation.
