★★★★☆ 金猫魔Soutenbo Junmai Activated Nigori Nama Sake Professional Limited Edition
The warning is scary 😱.
This was recommended to me at Matsuzawa at the beginning of the year.
When you twist the stopper, it shoots up in the bottle!
Scary! I'm sweating!
I tightened the bottle immediately, opened it a little bit, it spurted up, and tightened it immediately.
I kept doing this for a while...
I was able to open the bottle without spilling.
It was rare to see a child enjoying watching his father open a bottle of sake.
When I saw the lees spouting, I remembered that I used to have an interior lamp like this.
It was cloudy and cloudy with lees.
The firing sensation is pitch-perfect!
Light, not heavy.

I first encountered Muso a year ago and have bought it every season, but I still prefer the bright, bursting flavor of freshly squeezed sake.
The sky is dark in Niigata, but this is a sake that will brighten your mood.

Sake Day, Kubota's Autumn Agari!
Gorgeous sweet banana-like aroma.
Mellow mouthfeel with a hint of sweetness.
It has a rich umami flavor that hits you hard.
It's dry with a lingering finish that slowly fades away.
It is delicious.
It's been almost a year since I switched from beer to sake, starting with Kubota Aki Agari last year. Even though I live in Niigata, I never thought there would be so many different kinds of sake for each season. Always something new to discover. A never-ending journey.
Today is my mother's birthday, so I 🌸 flowers.
I don't drink sake, so it's completely for me and my father.
I didn't know it until this year, but she was born on a good day.
It's also coffee day. I like them both.
Also, today is the last run of the regular Joetsu Shinkansen double-decker MAX Toki. 🚅💨

金猫魔If you see it, just buy it.
It's from Itsumi Shuzo, the smallest of the five breweries on Sado Island.
It's a limited edition Itaru No.7 Yeast Junmai Genshu, freshly brewed.
It seems that 1801 yeast or Niigata G9 yeast is used for the regular Junmai-shu, but I wonder what kind of yeast is used here.
Dark, sweet, gorgeous aroma, banana?
A moment after I felt the sweetness on the palate.
A stimulating sourness that comes tangy from the tip of the tongue
When it settles down, it has a subtle sweetness and a deep delicious taste.
It has a crisp aftertaste that goes down your throat.
It finishes with quite a dry taste.
The alcohol content is high, but it is refreshing and easy to drink.
It is easy to drink without getting tired of it.
If you warm it up, the acidity becomes softer, which is also delicious.
It's quite different from the solstice I'm used to drinking. Interesting.

★★★★☆ 金猫魔Yukiotoko sakeyell II
Aoki Shuzo has released a special limited edition saké to break the Corona situation and also to send a cheer to the Olympic Games. It is an exquisitely balanced blend of Junmai-shu brewed with Koshitanrei, Yamadanishiki, Miyamanishiki, Omachi, and Gohyakumangoku, all of which are stored in the "Snow Chamber of the Dr.Tsuru" for long-term maturation. It is an assemblage in wine.
Because the rice polishing ratio is not disclosed, it is treated as ordinary sake.
The idea is to make high quality sake at a reasonable price.
There is a reason why we chose to use the Yukio label instead of the Tsurumei label. Yukio is an animal that appears in the story of Hokuetsu Yukihoku, and it depicts a scene where a traveling merchant and a Yukio help each other. This is the message of the game. Snowman is holding a flag!
Clear pale gold, mildly fragrant
Soft, firm and rich rice flavor.
Complex but deep taste.
Sweetness, acidity, bitterness, well-balanced and well integrated.
It is dry with a clean finish.
