4/5 Strong, flavourful, clean. Papaya, orange blossom, chestnut, almond, caramel, salt, graphite. Pretty dry yet there’s a confident little sprinkle of sweetness in there that has some fun and then disappears by the smooth and savoury finish. It’s pretty strong, gives a bit of an initial smack and there’s some quite noticeable bitter notes. But it’s pretty well balanced and it adds to the excitement. Still, it feels quite elegant and mature. It takes you on a fun and interesting journey.

3.5+/5 Good flavourful sake, very smooth and surprisingly sweet. Yellow apple, honey, golden raisin, cherry blossom, marzipan, stone. Pretty flavourful, clean, crisp, and smooth. Very little bitterness, with a pinch of savouriness. Low acidity. Probably the sweetest non-nigori sake I’ve had, almost a little too sweet, or it could use a bit more acidity or something.

3.5+/5 Very clean and crisp, there’s a hint of acidity but it doesn’t go too far, light pinch of sweetness, with a bit of a savoury finish. Somewhat floral. Burnt sugar, sweet corn, marzipan, jasmine, chamomile, wet concrete. Really like the delicate floral flavours and the clean fresh feel, but it gets a little strongly bitter towards the end in a way that I don’t prefer unfortunately. But overall it’s not bad and fairly enjoyable.

3.5+/5 Clean, dry, very simple. Honeydew melon, almond, stone. It’s not bad, but there’s not a lot going on, but the flavours present are pleasant enough. It’s a little bit strong towards the end, not exactly too bitter, but kind of a vodkaesque burn that isn’t my favourite. Still, it’s overall enjoyable.

3.5+/5 Was ready for this to be kinda unpleasant but it’s actually not bad at all. It’s clean and pretty nutty with some interesting savoury notes. Cantaloupe, cucumber, almond, konbu. Yes it’s a little sharp and bitter at times and could be smoother, but for the price and everything it’s fairly enjoyable. The cap is a fun idea, but I have my own ochoko, so straight into the recycling for that.

4.25/5 Very creamy and tasty. Cantaloupe, white chocolate, coconut cream, Swiss cheese, raw almond, stone. Confidentially medium-plus sweet but with some interesting savoury notes. Pretty sweet but still feels mature. Deliciously creamy, but ends on a nutty more savoury finish with a surprising bitter note which isn’t overwhelming. Truly delicious nigori brewed in the US in Berkeley, California. Proud that we can produce saké of this quality here! Paired well gyoza.

3.75/5 Clean, crisp, and lightly sweet. Banana, honeydew melon, honey, graphite. Low acidity, medium-low sweetness. Pretty smooth, finish is a little sharp, but overall pleasant. That being said it’s a little too strong for me, but not so much that I can’t enjoy it. There’s a clean chlorinous quality that I like, reminds me of a cool swimming pool in summer. Still, could be a little smoother for my tastes, perhaps needs some dilution and a pinch of acidity. But overall it’s pretty good!

3.5+/5 Interesting, deep and complex and slightly savoury. Cantaloupe, vanilla, walnut, Swiss cheese, salt, graphite. I like a lot of the flavours but there’s a point at which the bitterness gets a bit too strong and graphity for me. Good melon flavour, good little pinch of sweetness, dry and clean finish. This is another one that I really enjoy a lot about but falls down just because it’s a bit too sharp.

3.5/5 Fresh, clean, pretty smooth. Cantaloupe, burnt sugar, marzipan, stone. A lot of flavours that I like but the bitterness gets a little strong towards the end. It’s initially very smooth with a light clean sweetness. Gets a bit sharp on the end and has a kinda vodka-y aftertaste which isn’t the most pleasant. Interesting to try a honjozo but this isn’t my favourite, it’s fine though.

4/5 Nice light sake with a good little frizzante fizz. Simple flavours, clean: yellow apple, white peach, yoghurt. Nice fruity flavours, a hint of creaminess. Nice fizzy sparkling. Low acidity, medium sweetness. Great fun sip on its own. Clean, crisp, sweet, fruity, fresh. Very enjoyable.

3.25/5 Not bad, a bit sharp. Honeydew melon, sweet corn, cream cheese, salt, graphite. Nice light fruity flavours but it gets unpleasantly bitter on the finish. So overall it’s not my favourite. This is an odd American rebranding that I was interested to try. It was difficult to find the actual brewery, the label just says “The Fuji Brewery”. Had to look on the website. Joto basically repackages Japanese saké to “make it easier for Americans to understand”? Seems unnecessary to me really.

4.5/5 Really nice, smooth and slightly creamy, but with a good medium acidity. Green apple, lemon zest, lychee, cream cheese, salt. Complex, delicious flavours, some of the brightest fruit flavours I’ve tasted in a sake. Hint of sweetness but pretty dry overall, finishes smooth and savoury. Enjoying this a lot! 乾杯 Also love the calligraphy on this one!

4/5 A classic! Sweet and creamy and easy to drink. Great flavours of cantaloupe, honeydew, green apple, mandarin orange, cream, honey. Love the creaminess. Great fruity flavours. Pretty sweet but not cloying and still feels mature. Medium acidity works interestingly with the creaminess. Not too many bitter notes but they work with the melon flavours. Had this several times before and it’s always good!

4.25/5 ☆ Wow! Really like this, it’s crisp and fresh and almost a little tangy but has a bold, almost creamy finish. Green apple, fresh corn, honeydew melon, honey, vanilla, almond, cream cheese. Complex, takes you on a flavour journey, with twists and turns and a satisfying finish. There’s a hint of sweetness that builds then fades, but overall fairly dry. I love the fresher fruit flavours in this. 乾杯！

4.25/5 Very nice! Sweeter than any (unflavoured) sake I’ve had before. A hint of acidity, very clean flavour, a bit of bitterness on the finish but it’s not too strong. Great flavours of banana, cantaloupe, papaya, raw sugar, and a hint of lime zest and salt on the end. There’s almost a creamy quality throughout that I really enjoy, like white chocolate. Enjoying this a lot, great with gyoza. 乾杯！

2.5/5 Brewed in the US, in Folsom, California. Not very good, I use it for cooking. Thought it would be fun to try to review it. It’s still drinkable though, pretty light and clean to start but then gets sharp and unpleasantly bitter at the end. Not many distinguishable flavours: graphite, acetone, corn? It would be pretty fine if the finish wasn’t so bad. Still, this isn’t America’s fault I don’t think, I’ve had cheap Japanese sake that tasted similarly poor.

3.75/5 Clean, crisp, smooth, lightly sweet, some bitterness in the background but never too strong. Banana and honeydew melon, a hint of lime zest. Ginny aftertaste, but not strong. Really like how clean it tastes, and maybe it’s just the branding but there’s an oceanic quality as well. Pretty enjoyable nice and ice cold!
