Cold sake
The aroma is slight.
It has a slightly choppy and thick taste, with a beautiful acidity and a pleasant umami taste.
It goes down the throat quickly with a hint of sweetness and a little bitterness.
This is delicious! The best balance!
Personally, I think I prefer Izumikawa to Tobiroki.
It's a little sweeter than the Tobiroki Jundais I drank the other day (maybe due to the thickening).
You will not get tired of drinking it, and it will go down easily!
It was the best pairing with lotus root kimpira, and I think it has the potential to go well with a variety of dishes.
I hope we can meet again next year!
It seems to go well with New Year's dishes such as Osechi, so much so that I wonder if I should have opened it on New Year's Day!
Cold sake
It's thicker and more sour than cold sake.
It seems that cold sake is better in terms of balance.
Warmed to the skin
The acidity is still strong, but the bitterness has increased.
I think this sake is best served cold.
