I like Moribari, but I bought this one for New Year's sake.
Chilled
I can feel the soft acidity and the umami of the rice. There is almost no bitterness, and it disappears quickly after a while.
Warmed up
I feel the acidity a little more strongly now. It's still soft on the palate, but the umami spreads further.
It's a sake that warms up well.
Warmed up
The acidity and bitterness have become a little stronger.
It's best warmed up.
But it goes really well with food even heated up, so it depends on the temperature of the food.
It is an excellent sake that goes well with all kinds of Japanese food.
This brewery has been through a lot this season, but I hope the taste remains the same.
