I've been letting it sit for about 6 months, but I'm planning to open Izumikawa (which is the real deal) at the end of the year, so I opened it to see the difference.
Cold sake
The aroma is very mild.
The acidity and bitterness come first, followed by a mild umami taste, and then a clear, dry taste that disappears from the mouth.
The quality of the sake is very clean, and the character is not too strong, making it a well-balanced sake for sipping.
Jundaishu as a saké? But it's easy to pair with many things.
It's more fish than meat. I'd like to try it with oyster butter.
I'm sure it would go well with poelee, so let's go buy some fish before they run out!
It's a bit expensive at over 2500 yen for a 4-gallon bottle, so I think I'd rather have the black label or the special junmai.
I almost never see them on sale, though!
