I asked for a heated sake at the liquor store, and they recommended this one, which they only had in a 1-masu bottle, but I figured I could keep it at room temperature.
Apparently it's only available twice a year.
I'd only heard of this brewery before, but I didn't know they made this kind of stuff.
It has a retro label, but the English font is very cute.
Cold
The aroma of soft lactic acidity spread and surprised me!
No, it's natural because it's a namaimoto type, but I was surprised at the difference because I only knew Kamizen.
When you put it in your mouth, the sweetness comes first and then the sourness is quite strong.
After that, the bitterness and the sourness go away.
I had only a light image of Jozen, but it is good with a solid taste.
Tepidly heated
The alcohol has become a little stronger.
The sweetness and the umami of the rice spread in the mouth.
The bitterness has rounded off and become more cohesive.
A very tasty sake that you can continue to drink without worry.
There is more to come, so I look forward to seeing how it changes over time!
