The umami comes first, followed by a good soft acidity. Delicious. It has umami, but it is not heavy and smooth to drink. Hiyaoroshi" is said to have less acidity than usual.

Dry, acidic and refreshing.
The aroma is clear and pleasant.
It is refreshing, but the sweetness comes later and makes the sake go further.
It goes well with fatty snacks.
It is highly aromatic and very easy to drink, with a neutralized sweetness and acidity. The taste is so elegant that even an amateur's palate can tell that it is made from delicious water (one of the 100 best waters in Japan). (Dry but soft on the palate).
Slightly effervescent (?) The aroma is fruity but the taste is light, perhaps due to the slightly sparkling (?) flavor. The flavor may be brought out if it is heated to lukewarm.
On the second day, the slight sparkle was not noticeable. It is delicious and easy to drink.
