Tasted at the Niigata Prefecture exhibit at the Osaka Kansai Expo. It was a test brew. I was only able to taste a small portion of the sake, so I could not savor it. It was very refreshing. By the way, a set of three 40ml glasses and salted fish was priced at 1,500 yen.

Mildly umami and mildly dry. Easy to drink and delicious. Purchased at Imanishi-san on the approach to Ojin Shrine, which I visit several times a year. There is much less sake on the shelves than before. It has been selling well lately, and they are running out of it. As a small brewery, they have considerably reduced the amount of sake they sell to retailers. The store on the approach also needs to increase the number of days it is closed, he said. The Miwa Lore Storehouse across the street from the approach will open the day after tomorrow. I am looking forward to it.

I spent my elementary and junior high school years in Oosazawa. Local sake from Kazuno Hanawa, aged in the mine tunnels. Chitose Mori Sake Brewery crowdfunding return gift. Mellow and fruity. It reminds me of the Kazuno apples my mother would peel and eat every night during the winter in the room with the wood stove burning.

Toasted on New Year's Day 2024 with Takezumi, a sake from his hometown. It won a platinum award at the 2022 KURA MASTER in France. It was served lukewarm. It has a mellow taste like a matured sake.

Hyogo-Nishiki, Fire-brewed Hyogo Nishiki is grown in pesticide-free rice paddies where storks feed on it. Slightly dry and refreshing. Easy to drink. Winner of the Platinum Award 2023 at a competition in France. I always buy Takezumi when I go back to my hometown.
