From Saku-no-Hana, one of my favorites, this sake is made with high-productivity malic acid yeast (Nagano yeast P43-14). On the first day, it was sweet, sour, and fruity, with a slightly low alcohol content that made it easy to drink and enjoy. On the second day, the sourness decreased and the sweetness became deeper.
