We have recently been skipping the Ehime sake drinking comparison. Today's starter is a brewery in Kanada-cho, Shikokuchuo City. Needless to say, it is a well-known brand in Ehime. It is a light and dry sake, but you can feel the umami and richness of the rice in your mouth. A beautiful sake with no cloying taste.

Alcohol 16-17
Although it is a regular sake, Yamada-Nishiki is polished to 50%, the same level as Daiginjo, and carefully crafted to bring out the characteristics of the rice. It has a soft fruity aroma and a soft sweetness that spreads in the mouth.
