Business trip to Ehime Saijo City. The squid sashimi and eel will be paired with Ishizuchi, a local sake from Saijo. It is served hot. From the first taste, you can feel the mellowness of sake and the umami of rice. Even when heated up, it sets the table nicely for the meal without any alcohol taste or harshness. I have had many Ehime sake, but Ishizuchi is the one that suits me the best.
When I paid the bill, I was told that the sake was Ishizuchi's honjozo. I thought to myself, "So it is a honjozo after all. On the other hand, I was reminded of the fact that I had recently been expressing my impressions of daiginjo and junmai sakes immediately, just as I felt them. I realized once again that the lingering aftertaste, which is the real pleasure of sake, can be felt better with honjozo. Not only immediately after drinking, but even after leaving the restaurant, I felt the lingering aftertaste of sake along with the food. Honjozo is a real treat.
