Limited edition sake "Kofukuji Tamonin x Mizuhata 1568" created by Kofukuji and Aburacho Shuzo together using water associated with Kofukuji, limited to 353 bottles. Tasting with Chobei Yamamoto, owner of the brewery, and Akitoshi Tsuji, head of Kofukuji Temple's Jyonyoin Temple Rice polishing ratio 90 The brewing water is spring water from the Kofukuji Temple area The yeast is from over 20 generations of repeated brewing for the water edge. The yeast is made from the portion (unrefined sake) that has been repeatedly brewed for more than 20 generations of Mizuhata. Three-stage brewing (winter brewing) The aroma is banana and melon, It also has a matured aroma such as banana, melon, and grain-like aroma. The taste is reminiscent of soy sauce and mitarashi.
