Kaze no Mori's flagship 657 Akitsuho limited edition NeXT Although slightly lower in alcohol by one degree than the previous normal The mouthfeel is even lighter than the normal. The aroma of the normal was more fragrant and the taste was more forward with umami, bitterness, and complexity. NeXT's aroma is more subdued, while the flavor is juicier with a more clearly defined sweetness and acidity, making it very easy to drink. I felt that NeXT was in line with the recent trend toward lower alcohol content in sake, and was also easy to drink.
