Kaze no Mori's flagship 657 Akitsuho limited edition NeXT Although slightly lower in alcohol by one degree than the previous normal The mouthfeel is even lighter than the normal. The aroma of the normal was more fragrant and the taste was more forward with umami, bitterness, and complexity. NeXT's aroma is more subdued, while the flavor is juicier with a more clearly defined sweetness and acidity, making it very easy to drink. I felt that NeXT was in line with the recent trend toward lower alcohol content in sake, and was also easy to drink. Second bottle for the 50th anniversary Usually, Kojo-nishiki is rather bitter and dry. but this one is made from Yamahai (Yamahai brewing method). It has a clear sweetness and lactic acidity. The clear sweetness and lactic acidity dominate the taste. Personally, I find it very easy to drink. It is indeed a 50th anniversary commemorative sake. Possibly the best sake in Toyobai's history! Limited edition of 30 bottles This is the first and the last "30" sake brewed with Toyobai rice. So you might expect it to be a very clear sake.
