The bottle has a label warning you to open the bottle carefully...
Compared to the Otone Shuzo's Left Oshin that I had the other day, I was able to open the bottle without any difficulty.
It was an elegant sake that was more like a lees-based sake than a nigori sake.
It was fruity and had just the right amount of gas, which is a common expression, but in the end, I like this kind of sake.

It has a nice, tight, gaseous feel that only direct pumping can give! The aroma is reminiscent of La France and pineapple. A very nice aroma!

At the usual restaurant
The third cup was Machida Daiginjo.
It was light and cloudy, but the aroma was apple🍏, banana🍌,
fruit cocktail of apple🍏, banana🍌, and melon🍈.
The sweetness came first, followed by sourness.

The side dish was grilled chicken thigh with salt.

There were two types of bottles: straight and nigoromi, but I went for the nigoromi!
When I turned the cap, it slowly pusched. 2 times I opened and closed the cap, and the bottle was safely opened.
The aroma was like cotton candy or grape?
When I drank it, it was airy and soggy 🫧 The liquid seemed to unravel into bubbles when I put it in my mouth.
The sourness you feel on the side of your tongue, the riceiness, and maybe grapes. A little bit of koji-like?
I imagined it would be sweeter, but it is surprisingly refreshing and easy to drink.
The next day, I started with the supernatant.
Clear and smooth, not as heavy as expected.
The bubbles are still full of energy, grape and citrus soda 🍹 not much rice. Sourness drifts in with the aroma and tightens up with just the right amount of sharpness. There is a bit of alcohol at the end, a bit of a cackle, but that's okay too.
I like the taste a lot better than I expected on day 2 based on the sensations of day 1.
It has a certain weight and a satisfying, gusty feeling, but it maintains a line that moves along smoothly without sinking too low. I enjoyed it.
