It has a gassy, slightly sweet flavor and aroma like melon and green apple, with just the right amount of acidity to make it a juicy sake.
I served it with a side dish of betara-zuke (pickled radish), and the sweetness was very much in tune with it.

Machida Shuzo
I heard that it won a gold medal at this year's New Sake Competition.
It was named after the brewery's name in the hope that it would be widely known.
Currently, the brewery is led by Akiya Machida, the fifth-generation brewer, and his wife Emi Machida, the toji (chief brewer), who are married to each other.
Note the opening of the bottle! It popped like champagne. The youthful flavor and slight carbonation are pleasant. The taste of yogurt and rice, which is unique to muddy sake, is well balanced, and the aftertaste is crisp and clean.
It is a sake that is not often tasted, but this sake has a pleasant acidity that makes it easy to drink.
Special pure Miyama
Lightly gassy and tasty. It is rice. I am surprised at the low sweetness. I thought it was sweeter. But this level is just right. It is round and tasty with clay, different from the Fukushima type. 87 points
