This sake is from Ito Corporation, led by the ninth generation Ito Yu, who was able to revive the brewery through Kurafan. I bought this one after hearing the story behind it from the liquor store owner, and it tasted quite good as well. On the day of opening the bottle, the slight fizziness and crisp, dry aftertaste were impressive, but as the days went by, the sweetness also came out. ShikishimaIt is good. I would like to try other series.

I actually bought this one from Noboru in Tenri on my trip to Nara last year😅.
After I bought it, I drank another Shikishima and it wasn't so good, so I hesitated to open it and it's been a year 😌.
The top aroma is slightly sweet with a woody flavor and acidity.
In the mouth, it has a smoky woody flavor and a rich acidity and umami.
Some people said it was like whiskey, and I thought I understood what they meant.
On the fifth day, it became even sweeter and quite tasty.
I wonder if it was a good idea to let it rest? 🤔

Refreshing ✨ light ramune 🫧 a little spicy and bitter. The dark seasoned conger eel in kama-ni gives it a more umami taste. The spiciness is increased by fried scallops, and you feel like you're waking up. The pickled white gourd gives it a crispiness.

The whole event was crowded and the staff seemed to be having a hard time, but only the Ito staff was very polite and told me, "We have two KTs at the other breweries, so be sure to compare!" I was very grateful to the staff in Ito who told me that there are two KTs in other breweries and I should compare the two!
I later compared the pictures and found out that the staff member was also an instagrammer of Shikishima (I was also following them), but I didn't notice it 🫠.

We went to the Hokkaido product exhibition at Matsuzakaya right next to the sake festival venue, so after the first drink, we went to the exhibition to buy a seafood bento for lunch for the husband and croquettes for me to go with my sake ✨.

A gift. Shikishima is a very light image for a revival brewery.
The top clear has a mild but dry lactic sweet aroma and taste, and the bitterness builds up and tones down nicely at the end of the bottle.
When mixed with lees, the umami and bitterness become more direct. It is like turning up the volume of music?
I'm sensitive to bitterness, so I think it's just right that it's well chilled.

I was aware that Shikishima in Aichi was bread❓ but Shikishima is sake🍶 and unfamiliar No.8. The aroma is modest and slightly effervescent, and the moderate acidity makes it easy to pair with food🍙.
