The milestone 500th check-in was Hato Masamune🕊.
I was looking forward to it when I heard that the sake rice was changed from last year's Yamada Nishiki to this year's Gin Kabosho made by Touji Sato 😊.
Manachie had a blowout alert ⚠️ so I chilled it in the fridge with the temperature set to 0°C before opening the bottle and it started stirring automatically 🫧.
I managed to get it to stop after one opening and closing.
The top aroma is sweet, similar to the aroma of sake made with Gin-Karasuji (Hakutsuru, Nyokura, Tasake) that I have had at other breweries in Aomori.
The same rice is used to make them.
When you put it in your mouth, it has a slight carbonation.
It has the mellow flavor of Gin-Karaboshi with a hint of sweetness.
It is neither dry nor overly sweet, but has a very good balance and none of the bitterness I was worried about.
I think it is definitely better than last year's Yamadanishiki.
I drank the supernatant the next day, and it had a bit of strong acidity, followed by sweetness, and then a bitterness that ended in bitterness.
It is mellower and tastier when mixed with ori.

Gin-Karaboshi is the grandson of Hana-fukiyuki, which is used in Tasake's Toku Jun Nanka, and it is a recently developed variety that can be grown on the Pacific side of Aomori where the Yamase blows 🌾.

Slight aroma, smooth attack. The taste is fruity and dry, with a hint of apple. It goes in smoothly and has a good sharpness.
As expected from Aomori, the apple kingdom 🤣.
The fruity aroma of green apples comes from the apple yeast 🍏😄and the lingering bitterness and subtle spiciness at the end is also nice. It is refreshing and easy to drink. The only entrée is smoked cheese and edamame, but it's good enough on its own, so that's good too👍.
It is brewed with Hato Masamune's apple🍎 acid yeast.
The initial aroma is slightly sweet and sour like apples.
In the mouth, there is a hint of sweetness and apple acidity.
It finishes with a slight astringency.
Compared to last year, the sweetness is moderate, but the astringency makes it less apple-like.
It was delicious 🍶🕊.
Next up was Hato Masamune's Kamisen 🕊 sugar-added sake.
You can't find this kind of sake anywhere but Aomori 😆.
The first aroma is slightly sweet.
When you put it in your mouth, it is a little sweet for a Hato sake.
I wonder if this would go well with Towada's famous sweet and spicy sauce for roasted bara 🤔.
It's a little dangerous because it's easy to drink without any bad taste, but it's so sweet that you might get bored in the middle 😅.

This AQE was isolated from the Shirakami and Hakkouda mountain ranges,

This is a challenging sake because it is made by Miura Shuzo, Hachinohe Shuzo, and Hato Masamune, who have never used Yamahai or Namahashi (traditional sake brewing method) except for Tasake.
How about Hato Masamune?
There is a long pause between the first sip and the end of the second half.
In the worst case, it's prolonged.
To put it better, it spreads in your mouth gradually.
After the third cup or so, it starts to blend in nicely.
