Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

I bought it in a bottle because I had a good impression of the one I bought before. Therefore, it was fire-aged. Slightly colored. The aroma is fresh, with hints of apples, white flowers, and white gemstones. There is a good balance between sourness and sweetness. At first, it seems to be mainly acidic and crisp, but later the volume of sweetness comes in and gives the drinker a sense of fullness. The aftertaste is sweet, but the acidity and minerality do not leave a bad aftertaste. If it were to be heated, it would probably be to lukewarm. Basically, it is a sake to be drunk at 10 to 20 degrees Celsius. I think it would probably taste even better if it were served at a more appropriate temperature. I really wish that sake breweries would not leave it up to the consumer to decide how to drink sake, but rather provide some recommendations on temperatures and sake containers.

HYOGO SAKE EXPO 202321 Okada Honke "Morinori", Kakogawa City, Hyogo Prefecture Founded in 1874. The company uses 100% Hyogo rice and water from the Kakogawa River. Okada Honke did not have a booth for a single product at Morinori, but had a booth where about six breweries gathered to taste and sell their products as a ring series. Morinori Tamaki Junmai Ginjo Nama Hashiroshi It has a light acidity and a spicy flavor. It has a light acidity and a dry, umami flavor with a hint of honey. I had had a Morinori's Namo Hashiro before and it gave me the impression of white wine, but I think it was the same 🤔.

HYOGO SAKE EXPO 2023⑭ Okada Honke. They did not open a booth as a brewery, but only had a booth in the "Ring" series. A little disappointing... The "ring" series is an SDGs sake. (Please Google for details). It is a project by a farmer, a sake brewery, and the Kobe Shimbun, and is sold by Fukuju, Fukyu-Nishiki, Banshu-Ichiken, Shirasagi-no Shiro, Morinori, and Ozeki. I remember that all of the "Ring" series were delicious. I thought it tasted modern or a little different from each brewery's regular products.

Although it is a summer sake, it is very easy to drink because it has a strong sweetness and yet the aftertaste is refreshing. I really like the taste! A refreshing and easy-to-drink dessert sake! The other day, I tasted Gozo Ittada's Morinori ver. at a nearby standing bar and enjoyed it so much that I took home a different Morinori. It was a delicious sake with a clean taste and gasiness while retaining the flavor of the original sake yeast.
