This is a Junmai Ginjo 98BY from Gonohyu. This is the first time for me to drink such an old sake. I was honestly a little scared until I drank it😅. First, I drank it cold. The initial aroma is sweet with a hint of acidity. In the mouth, there is a slight citrus acidity and a light sweetness. It is not twisted at all. Next, we tried it warmed. The top aroma is sweet and sour. When warmed up, the acidity and sweetness increase, which I really like. It was the best sake I've ever had heated 🍶✨️ I've had the same with Okutanba 21BY, but this one was so old that I wondered if it was really 98BY. Thank you very much for your precious sake.

Good evening, Ms. Matsuchiyo. I was surprised to know that Icoma-san was dealing with Gohyu 😳 I was in the 2nd grade at the time, so I had no way of knowing about the 98BY 😅. I think it's in good condition because Icoma-san keeps it in the fridge even though it's fired 🤗.

This is a 21BY wooden tag from Okutanba 🍶. When I arrived at the store, it was already stripped and in the state shown in the photo on the left, but it seems to be sold wrapped in the paper in the photo on the right. Sake wrapped in newspaper or paper looks delicious 🤤. The top aroma is slightly sweet. When you put it in your mouth, it has a moderate sweetness and a mild umami. You wouldn't even know it was 21BY unless you were told. It was quite a tasty sake. ✨️

It is dry with a moderate sweetness in the mouth, but well balanced with umami. It was quite delicious ✨

On the left side of the photo, I forgot to take a picture of this one, so I borrowed it without permission from the social networking site of the organizer of the meeting 🙄. This one is also served cold. The aroma on the nose is fruity and sweet. The sweetness is refreshing on the palate and finishes cleanly. It was quite delicious ✨.

It is nigori sake of Shugetsu 🍶. I forgot to take a picture, so I borrowed it without permission from Ikoma Sake Shop's SNS 🙄. This one was served cold. The top aroma is a unique rice aroma like koji mold. According to Iikoma-san, who came to the sake meeting, it has a brewer's peculiar aroma. It is not such a strange aroma. When you put it in your mouth, it has a mild rice flavor with a moderate sweetness. It is not dry, so it is easy to drink. It was delicious. ✨️

Also by Kamosho Brewery, Hyakuninichi Sake🍶. This sake is made from Koshihikari rice. The aroma is slightly sweet on the nose. When you take it into your mouth, it has a moderate sweetness and a gentle umami flavor. It is slightly dry. It was delicious. ✨️

Kamosho Shuzo's Kamiike🍶 is located in Tamba City, Hyogo Prefecture. The brewery produces 20 koku of sake, and bouken-san and Nemuchi-san have also explained the details of this brewery, so if you are interested, please take a look. The first aroma is soft and fruity. In the mouth, it has a beautiful sweetness with a slight acidity that finishes off the taste. It was quite tasty, but my impression was totally different from bouken's and Nemuchi's. lol The owner of Icoma Sake Shop who brought the sake to this meeting also said it was fruity and sweet... 🤔.

It is a Junmai Daiginjo from Morinori 🍶. It seems to be a collaboration sake with Rairaku from the same Hyogo Prefecture, please refer to bouken and Nemuchi's post for more details: 🙂‍↕️ The nose is fresh and sweet with a hint of acidity. In the mouth, it has a fresh, shwashy feeling 🫧. Fresh sweetness like white grapes with a hint of acidity. It has a refreshingly clean and crisp taste, as is typical of sake made from Gohyakumangoku (five hundred million stone). It tastes like Omine, but this one is fresher and fresher because it has a gaseous taste. It was the best cold sake I drank that day 😊. I think this one would sell well even if it was sold straight at SEGA or ◯SHO ◯TA 😂.

Next is Shugetsu's Morning First Shibori from Tanba Sasayama. It does not have a specific name, so I wonder if this is also a regular sake. First, it was served cold. The first aroma is sweet with a hint of acidity. It has the freshness of new sake in the mouth. The sweetness is moderate and refreshing. Next, warmed sake. The top aroma is the sweet aroma of heated sake. If you like heated sake, you'll agree with me 😂. The sweetness expands in the mouth and it warms up beautifully. It was delicious. I've been looking for this sake on the net but only find it on the hometown tax 🤔.

The Junmai specs are all Special Junmai, so I think this one is Special Honjozo since it has the rice polishing ratio listed 🤔 Asa Shibori should have been around 2000 yen for 4 gos of sake.

I went to Chofu for a drink after bouken-san recommended a place in Tokyo where I could taste some minor Kansai sake. First up was Morinori's Josen 🍶. It has 20 degrees alcohol by volume. Sake from Kakogawa City, Hyogo Prefecture. First, it is served cold. The first aroma is slightly sweet. In the mouth, it has a full-bodied sweet flavor like sugar with the crispness of an aruzoe. Next, warmed sake. The aroma on the top is that of heated sake. Mildly sweet and umami with a nice sharpness on the palate. It is also good warmed up. Until they raised the price at the end of last year, you could get change for 2,000 yen for a bottle. I thought it would be like this if Sogen's Junmai Hatsushibori was made with aluzoe to give it a sharp taste. It was quite delicious 🍶✨️
