The 7th Matsuo Taisha Sake-1 Grand Prix㉕
This year, there are two breweries with 𓆏 emblems.
The first brewery is the booth of Niidashi Zenshu.
It will be a sake brewery that protects rice fields and water in Japan. They use only natural water from "Takeuchi well water (hard water)" near their own rice fields and "Mizunenaki spring water (soft water)" from their own mountain.
Shuyo Odayaka Junmai Ginjyo Smooth and creamy.
A dry and slightly creamy water with a sparkling taste. Slightly effervescent compared to sparring.
Shuodai Odayaka Sparkling
This is a bottle-fermented sake made by the same method as Champagne. It also has a dry aftertaste with a sense of sizzle.
I think the power of nature is amazing.
Purchased at Koriyama station during a trip to Fukushima.
It has a strong, melon-like flavor, similar to other Fukushima sake, and my taste buds were right on the money!
It may be a bit similar to Hirotogawa's nigori.
I also liked all the other Fukushima sake I drank in Koriyama.

I don't really like frogs, but when I was a kid, Sanrio's Kerokerokeroppi was all the rage, and all the gym uniform bags and school lunch bags were 🐸.

Odayaka Sparkling
TOYONISHIKI, 70% polished rice, 12% alcohol
This sake is made by fermenting freshly squeezed sake in the bottle.
It is dry, shriveled, and champagne-like 🥂.
The sweetness and refreshing acidity are impressive!
Shimizu Odayaka Junmai Ginjyo Ususu Nigori Nama-shu
Miyamanishiki, 60% polished rice, Sake degree 15.5
The ginjo aroma is reminiscent of peaches. It is as sparkling as a sparkling wine. Refreshing with a good balance of sweet and sour.
Well, I've never had a sake like this before because I've only had Niidashi Sanshu...
First, let's start with the supernatant.
It is moderately slightly carbonated, a little sour, and delicious!
Then, mix it to make it cloudy and gulp it down.
Delicious! It is certainly mild.
It is tangy and flows with the sweetness and aroma of apricot and a little nutty.
Being a hiyaoroshi-goshi, it was delicious with a bit of fruit maturity.
Mystery Cheese Shop usually has Niidashi Zenshu in stock, but this time they had a rare Odayaka in stock, so I bought it ✨.
The frog logo changes with each type, so what does it stand for? It makes me think 🐸.

Sake made with Omachi from the Odayaka series. A sword is drawn on a frog, which looks not so calm.
It has a strong koji aroma. The sweetness is rather subdued with a koji flavor, and complex acidity and umami come in around the time of the carbonic acidity. It leaves a slightly astringent taste and has a refreshing aftertaste.
It is certainly more like a sword than a junmai sake. Come to think of it, this is the first time I've tasted Shizugen... I'd like to compare them.
