Junmai Ginjo Shiboritate Nama
It has been a very long time since the last time.
The aroma of the freshly opened bottle is like melon in yogurt. The taste is not really yogurt, but there is a sourness. Plum-like? There may be a slight astringency.
The next day, the sourness becomes stronger, but after about 5 days, the sourness becomes mild, and the yogurt and sourness are just right and beautiful. After swallowing, you can smell the delicious alcohol on the palate.
Next was a Junmai Ginjo from Yasu.
It is also a cup with a gentle and fruity taste that is typical of Fukushima.
I had it with grilled crab with miso sauce, and it went very well with it.
Gorgeous aroma
The flavor of the rice is enchanting, with a firm sharpness and a fluffy aroma that becomes more gorgeous when mixed with the sake lees. As the name suggests, it made for a peaceful evening.

It has a firm, yet beautifully gentle acidity and a good balance of umami, bitterness, and sweetness.
