Cattle set, the rice polishing ratio of 47 in French. It is a gift from a relative of the brewery. It is gorgeous like Yamadanishiki, and has acidity and a good taste. We got a good one.

Slightly colored liquor. The aroma contains a sourness reminiscent of yogurt and pomegranate.
At room temperature, it has a sour and sweet taste, with a delicious flavor that spreads throughout the mouth. As it warms up, the acidity softens and the gentle flavor spreads, and the sake clears up quickly.
The sake's gentle flavor makes it a perfect accompaniment to a variety of dishes, and it can be drunk at room temperature or warmed.
According to the sake shop owner's father, Endo Shoji, the brewer, got a new machine this year to wash the rice. I'm not sure if that's the reason, but it makes for a beautiful, gentle sake.
There is a local liquor store that carries it, so I bought it, even though it's a little far away. It doesn't say it's made from Hyogo Yumeski, but I think it's an unprocessed sake. At the beginning, the acidity and the richness of the flavor are impressive. At the end, the tongue tingles. (Impressions with cold sake)
