A hint of semedyne, bitterness and sourness on the palate...not enough to bother me...but maybe it's because it's the first time I've brewed it...or maybe it's because it's been burned? It's not what I was expecting.... I thought. Hmm! Is the acidity strong? I think it's good as a food sake... a little too subtle for me personally...

Home Drinking. Today is our regular lunchtime only. The bottle we chose is from the sake brewery we visited last week. The first impression is a stronger fruity aroma when the bottle is opened compared to the Junmai sake reported last time. The accompaniments are sashimi, horse mackerel, dashimaki, and yakitori (grilled chicken). The first impression is the umami from the sweetness. The first sip from the aji no nameko (horse mackerel) removes the smell of the horse mackerel, and the spiciness cuts through it cleanly. It is a delicious drink.
