Today's lunch only is Shizenigo, a sake from a brewery we visited last week.
I visited there to purchase a bottle of the same brewery's instrument Masamune, but it was not sold at the brewery. Too bad.
When you open the bottle, the carbonation is released and a sweet aroma spreads.
When you put it in your mouth, the sweetness spreads, but it is not strong.
When paired with bonito, it enhances the umami without giving off a bad smell.
A delicious cup.

Very chili when you include it! I've put it down quite a bit and it's amazing.
The soft grapefruit and rice sweetness comes, but is quickly swept away by the chili and clear mouthfeel. It's like being treated with a light bitter acidity.

Purchased at the brewery! I couldn't help but oooh and ahhh. It's a perfect match for the lingering summer heat, with a well-timed rush of bitter, tasty, and acidic flavors! Yogurt type lactic acid, I guess.
Instruments🎷 are great, but so is this one: 💁♂️
Shizenigo🍶 is also delicious 🍶 ❣️
If it's just for the drinkability, I'd say Shizenigo 🤔
It has a good balance of gasiness, sharpness, umami, etc.

Since the rice polishing ratio is 60%, when I bought it, I expected it to have a slightly strong and peculiar rice flavor, but surprisingly, it has a clear mouthfeel.

Today's sake is Enryu Junmai from Shizenigo. I drink this sake quite often this time of year. I was deeply moved that this sake won a gold medal at the Saké Competition 2025.
The aroma is of apples and peaches, but less so, with a hint of rice. When you drink it, it has sweetness and a slight carbonation.
