It is smooth on the palate, and due to the good balance between the umami of the rice and the mild acidity, it is easy to drink despite its robust flavor 😚. It was a delicious sake 🥳.

A hint of semedyne, bitterness and sourness on the palate...not enough to bother me...but maybe it's because it's the first time I've brewed it...or maybe it's because it's been burned? It's not what I was expecting.... I thought. Hmm! Is the acidity strong? I think it's good as a food sake... a little too subtle for me personally...
