One day during GW, I went to Yamaga for breakfast.
It was an all-you-can-eat set meal of rice topped with an egg 🥚.
I ate a lot of 🥚 in the morning, as 🥚 was also used in the small bowls of the set meal.
On the way home, I stopped by the Hana-no-Kou Sake Brewery.
I had plans after that, so I bought some cherry blossoms and sundries here at the store and left right away.
On the first day, it was kind of hard? It didn't have much sweetness, and I felt a strong al feeling!
On the fourth day after leaving it alone, the sweetness that seems to be the fragrance of the flowers came out and it became delicious 🥰.
But it feels spicier than usual 🤔 this lot is a bit spicy 😁.

The last one is Junmai Ginjo🍶, a 55% polished junmai ginjo with the scent of flowers "Kikka".
This one was also hard on the day of opening the bottle, so I left it for a few days.
The initial aroma was sweet like banana milk.
The first aroma is sweet like banana milk, and the mouthfeel has a gentle sweetness and umami flavor.
It is the sweetest and most delicious of all the Umezakura Kiku (the cheapest).

To be honest, all three were not so good on the day of opening, but I was surprised at how they opened up after the second day.
This Kikka in particular turned me on.
I wonder if this one is fire-brewed since there seems to be a separate nama-shu.

I would love to buy a honjozo with a label like this if it existed 😊.
The fourth picture is the statue of Dan Takuma at Shin-Omuta station of Kyushu Shinkansen line, where I got off the bus connecting to Omuta station on my way back from Hananoka.
(You've all learned about this in your compulsory education, so I'll skip the explanation.)
It took about 15 to 20 minutes by cab to Hananoka from here.
Next, Hana no Kaori "Sakurabana" 50% polished Junmai Daiginjo🍶.
This one also felt a bit stiff on the day of opening, so we decided to wait a few days.
The initial aroma was sweet with a hint of wooden vat.
In the mouth, there is a gentle sweetness with a hint of umami.
It also seems to be very smooth and clean.
It was a well-balanced daiginjo.
It was delicious 🍶✨.
The third picture shows the store attached to the brewery.
There was a bottle of Yamada Nishiki Ninonjo on the shelf, but I preferred the Hozu so I passed it up 😌.

There is more to the sake from the Fukuoka trip that I posted at length last month. On the last day, we visited the Hananoka Sake Brewery in Wasui Town, Kumamoto Prefecture, on the border with Fukuoka.
This is a comparison of the Hana-no-Ka "Umehana", "Sakurahana", and "Kikuhana" sakes that I bought there as souvenirs.
I was late because I had to prioritize the sake I bought first 😅.
First up was the Hana-no-Kou "Umehana" 35% polished Junmai Daiginjo🍶.
On the day of opening the bottle, it felt a bit hard, so we decided to wait for 2 days.
The first aroma is sweet with a hint of acidity like green ume fruit.
The palate has a beautiful sweetness with a hint of elegant acidity.
It is a very smooth and clean taste.
There is also a gorgeous sweet aroma.
As expected of a 35% polished sake, it is very elegant.
It was delicious 🍶✨.
The third picture is the main building of Hananoka.
There is an exhibition space with tools used in the past and a peek-a-boo window to see the inside of the brewery. I also had a chance to sample some of the brewery's products.
Also, there was a tasting room, so I drank a variety of sake 🍶.

I haven't been there, but there is a brewery opening event on the first Saturday and Sunday of April, and there are bus tours from the nearest Omuta or Arao station.
I recommend it if you want to enjoy watching and drinking the fragrance of flowers 😊.

This sake was brewed in Kumamoto, my wife's hometown.
As the name suggests, it has a flowery aroma and a sharp taste.
Are you a shwash lover after all? The sake made by Hana-no-Kou Sake Brewery is full of my favorites! I can't help but drink up the fruity, shwashy sake right away!
Junmai Daiginjo was purchased at a sake brewery festival. Souvenir to my parents' house. I was told that the sake brewery here has a lot of dry but sweet sake, but it was easy to drink and I drank it in no time 😂.
