This is the first brewed Nishinomon. It may be rare to buy a fire-brewed version. When the bottle is opened, it has a gentle aroma. It does not assert itself at all. In the mouth, a strong sweetness can be felt at first, but the acidity that follows it gives a refreshing aftertaste, making it easy to drink. The rice flavor brought by the orikarami is also very nice.
When paired with a salad, the sweetness of the balsamic vinegar mellows out the sweetness of the sake. The bitter taste of soaked green pepper and carrot complements the sake. Delicious! After simmered sardines, the sweetness of sake helps to wash away the aftertaste of the dish. It also goes well with grilled sardines with ume shiso leaves!
The sweetness is strong, so if you don't mind it, I recommend it.

I thought I hadn't had a drink in over a year 🤣I thought I drank a lot because I always saw it at the liquor store 🤣.
It's still fruity but light!
I can drink it all the time without getting tired of drinking it 🤣✌️
And it's a pure Dai Dai, but it's very cosy too 💮♥️
I have not seen Nishinomon in a store for a long time. I bought several bottles, and this is one of them tonight. When the bottle is opened, it has a sweet fruity aroma with a hint of acidity. In the mouth, a full and robust flavor spreads to the palate, and the strong acidity tightens the aftertaste. There is also a bit of bitterness. It also has a richness that clings to the tongue. Interesting!
Shredded cabbage with sesame oil soy sauce and raayu on top. It sweetens the sake, but the sharpness of the oil refreshes it and it goes well with it! The stewed squid, evening glory, and eggplant in cream turns sake into a refreshing and light drink, so you can easily drink it. This is not good! Yugao is also delicious with wasabi soy sauce.
It was a wonderful encounter that made me feel refreshed and light with the snacks!

I was told that there is also sake made with brown rice. I wonder if I will be able to find sake made with unpolished rice someday.

I was curious about this Nishinomon from the label.
It's sweet and sour, choppy and bittersweet.
In my opinion, Nagano sake has a nice gentle sweetness: ❤️
On a recent trip to Nagano, Japan,
I went to a sake brewery to buy some sake.
I was allowed to taste various kinds of sake, including some very high quality sake.
There were many sake that I could drink with a clear, refreshing taste.
As I like acidity, I bought the R-Yeast one!
There were two types of R-Yeast, regular and sparkling,
I was impressed with the sparkling one when I tasted it, so I bought it!
I drank it at home and found it to be tart and refreshing!
The oji at the end mellows out and makes it easy to drink.
Highly recommended! Strong acidity and apple-like fruity aroma comparable to a white wine. The acidity is pleasant and tingling on the tip of the tongue. Goes well with nuts.
For the record. My brother-in-law gave this to me as a souvenir from a visit to Zenkoji Temple. He tasted it at the brewery and chose it. It was very easy to drink and delicious, with a full sweetness and umami flavor. Thank you very much.
