This is a freshly squeezed special honjozo of Chiyonohana. It is a local brand of Sugihara Shuzo (Ibi-gun, Gifu Prefecture), which brews Imi, and comes in three varieties: junmai ginjo, special junmai, and special honjozo. This summer I drank a junmai ginjo that had been aged in ice temperature for five months, but this is my first time drinking a special honjozo or a truly freshly squeezed one. The appearance is warm crystal. The aroma of rice and koji is fresh, with a strong hint of green bamboo. The mouthfeel is full of deep sweetness and firm umami, followed by a slightly stimulating acidity that quickly spreads to the palate and finishes with a slight alcohol taste. The lingering aftertaste is a gentle sensation of acidity and alcohol. After swallowing, there is a big impact 😳. The 17 degrees gives a thump to the body that has been accustomed to low alcohol drinks. When you roll it around in your mouth and let it get some air, the acidity dissipates and you can enjoy the juicy sweetness and thick umami, which is a nice touch. It has a strong flavor, but the acidity and the sharpness of the alcohol make it easy to drink. It seems to be very satisfying, though it will make you feel very drunk very soon 😄. I was thinking that I envy the locals ☺️ and was told that unlike Imi, Chiyonohana is sold by reservation at the brewery and comes with sakekasu (sake lees) 🍶. I'll ask for it when I get a chance. Hi Haruei Chichi 😃 You don't see it very often in Kansai, but this restaurant serves it sometimes: ☺️ It was like an antidote because I swallowed the first sip and it came with a bang even though the flavor was strong but I didn't feel any harshness or anything!
