It was much more light and dry than I had imagined. I felt the finish was similar to Niigata sake.
It may have been too cold, so I enjoyed the flavor little by little.
The flavor increased as the sake was allowed to acclimate to room temperature. It is gorgeous and a little full-bodied.
Still, it is crisp and refreshing.
I would recommend it to those who ask for something dry!
When paired with strong flavored food, it seems to drink like water, so I think it would be better with light food as well.
Still, it goes well with Iburi Gakko!
My father used to love Takashimizu's second-grade sake (Showa), and I have fond memories of it, but I am sure it is not as refreshing as this (laughs).
