Niigata Prefecture
Tokubetsu Junmai Nama Shu
Polishing ratio 55
Alcohol 17%.
I bought this sake because I missed the light and dry taste of Niigata.
It has a strong alcoholic and spicy taste.
It has umami like a pure sake, but the aftertaste is crisp.
It is the official Dodger Hakkaisan, and the bottle is a brilliant dodger blue!
The soft sweetness and umami of rice gradually give way to spiciness.
The aroma is calm and clean, and the impression is clear and light.
It has no peculiarities and is easy to drink, making it a perfect mealtime sake that goes well with meals. It was drunk cold, but would also be delicious warmed up.
Sake I received as a gift. I don't buy sake for myself, so in a sense it is valuable (laugh).
The ginjo aroma has a traditional sake flavor, with a hint of sake yeast.
The attack is not so different from the ginjo aroma, and it is sharp without sweetness. No acidity. The aftertaste is clear.
If you add 40 and 45 degrees to the water, the ginjo aroma becomes mellower, but the attack becomes stronger.
Personally, I prefer it warmed up to 40-45 degrees.
It would be nice if it had a little more acidity, but this is the original sake.
Special Honjozo Hakkaisan Blue Bottle
Polishing ratio 55%, alcohol 15.5 degrees.
It is said to be the official sake of the Dodgers support project.
My wife called me and said, "Let's drink today. So I chose a bottle with my wife's taste.
I chose a classic, light, dry sake.
The aroma was fruity and unobtrusive. The mouthfeel is smooth, with a hint of acidity and umami in the middle part of the bottle. The aftertaste is dry and crisp. My impression is that it is more "light and umami" than "light and dry. It is a bottle that goes well with meals without getting tired of drinking.
