This is Hakkaisan, a representative of Niigata's light and dry sake. It has a slightly spicy, refreshing, and punchy taste and throat, and finishes with a crisp and spicy finish.
Since it is a Hakkaisan, I thought it would be sharp and dry, right? I thought so, but it had a strong umami flavor. Rather than sharpness, it had a soft and beautiful mouthfeel.
