So they make kijoshu at Hakkaisan too! The rich sweetness resonates in the heart, yet it has a light and refreshing sensation that makes it easy to drink. It is a sake that shows a different side of Hakkaisan while still having its Hakkaisan characteristics.
A top quality product sold only in limited quantities and only in summer and winter. The bottles are stylish and beautiful. The summer bottle is blue and the winter bottle is black. The aroma is not that strong, but the taste is wonderful. I don't have the vocabulary to describe it other than "harmonious. It has a sharpness typical of Niigata sake, a hint of sweetness from the rice, and a delicious flavor that envelops the tongue. It is the kind of sake that you want to drink forever. It's as good as it sounds.
This is a first-class product made at a brewery in Hakkaisan that produces sake for the sake competition. This glass was made for this sake. It has a gorgeous aroma and a pleasant sweetness, umami, and freshness. It has a sharp taste and does not leave a lingering aftertaste, and goes well with meals.
It was chilled to below freezing and served sorbet-like when poured. The sensation of the crisp grains melting in the mouth is interesting. The strength of the original sake makes it a little more refreshing when chilled. I would have liked to drink it a little warmer.
I love the smell.
The sweetness comes first.
But because it's an undiluted sake, it's got a strong flavor that's hard to resist.
It's my favorite in the comparison.
At first, you can smell the aroma of rice for a moment, but then the acidity hits you hard and the rest is completely sparkling white wine!
It is the kind of sake that would be on the lineup of white wine at a high-class restaurant.
