I thought "takachiyo" was more on the fruity side, even with the kanji.
However, there is no sweetness at all ❗️
First, the umami that comes in quickly, followed by the acidity to control it, and then the growth can simply be called sake 😌.
It was a dry, crisp, and clear sake 🍶.
It matched best with food with salt 🤗.

It is a very direct dry taste. It was the kind of dryness that would go perfectly with salted yakitori 😌.

Kanji Takachiyo! We had two extremes, a farmer's dense sweet one and a +19 degrees autumn rise 😋 but somehow I have the image of Kanji = dry 🧐.
