Here is a bottle to accompany this evening. I wonder if it would go well with grilled kama-yaki (straw fish cakes). When the bottle is opened, it has a wonderful aroma of fresh pears. When you put it in your mouth, you can feel a strong fizz on your lips and the tip of your tongue. In the clear dry taste, there is sweetness and rice flavor, and a weak bitterness rounds out the overall balance. As the name suggests, it is best on a hot day! Because of the strong fizziness, I tried a glass of champagne, but it might kill the goodness of the sake because it increases the clean dryness and the bitterness is also stronger.
Fried green beans with salt and pepper. I love this. The sake gets sweeter and the sharpness of the sake makes the oil flow and I can't get enough of it! There's no reason why sardine ball sandwiched between home-grown shiso and grilled can't go with it, too. Sake, I can't stop. The kama-yaki (grilled fish balls) will enhance the flavor of the rice and turn it into a slightly heavier sake. This is also good. Crunchy ume plum pickled with salt. Salty and sour taste enhances sake. It might be the best match for sake.
Tonight, too, the night goes by with wonderful sake.
The first touch is naturally gaseous.
Then acidity, bitterness, a little sweetness, and a nice finish that quickly disappears as the gasiness fades away.
The overall taste is like a grapefruit sour, although the umami has a sake-like quality.

The aroma is quite fruity for a sake bearing the name "summer.
The taste is "slightly effervescent, easy to drink, and sharp with no lingering aftertaste.
It has no hint of sweetness, but there are certainly traces of sweetness. It is a bottle that has both the two weapons of "fruity freshness of the aroma and the freshness unique to summer sake" without any of the post-aging dryness of sweet sake imagined from the aroma.
As if the two have a master-disciple relationship, it has a sharpness reminiscent of Gagakuyo and a creamy fullness that can be felt as you drink it. The roots are the same, but I personally may prefer this one. It made me want to try a basic sake as well as a summer sake.
With this sharpness, I would have it with salmon halami.

I paired it with mackerel kizushi, and I think it goes very well with vinegar & soy sauce & wasabi.
As a stand-alone sake, it might be a little harsh for those who like dry sake.

It is dry as the label says, but it has a fruity taste.
