Timeline
KCertainly dry for a rainfall so far.
Less sweetness, calm taste.
The aroma is mellow, banana and melon type, but the taste is not so heavy and can be enjoyed with a meal.
4.50 KThe rice polishing ratio makes you think it might be a little more refreshing, but it expresses a beautiful sweetness while having a strong core.
The balance of sweetness, umami, and acidity in the aftertaste is impressive.
A very beautiful sake with a good balance of all flavors.
5.00 KIt is not so much malic acid as pleasant sweet acidity, just like red apple juice.
As the temperature rises, the umami is also well developed, but the strong, pleasant acidity is quickly snapped off.
I got the impression that I was shown a new type of malic acid sake.
4.75 KidShibata's be cool!純米大吟醸 KExcellent as a normal sake, but not cool.
It doesn't have the acidity and crispness of a summer sake, and you can feel the sweetness.
There is a slight lightness in the aftertaste, but I think it depends on the change in temperature, and in the end, I don't think it is that different from a regular Kido Junmai Daiginjo.
4.50 KNot too much acidity like a sour beer, but sweet and tasty like sake!
This is a sake with 8% alcohol content and 90% rice polishing ratio?
Perhaps the color of the liquid and the label are pulling my attention, but it tastes sweet and sour, like biting into a ripe white peach!
This is the first taste I have ever encountered in a sake, and I was surprised to find it to be just as it says on the label!
5.00 ZakuIMPRESSION Type H純米原酒無濾過 KRefreshing and fruity!
A fresh and aromatic sake that you would not expect to find in a hi-ire.
I see what you mean, H is Honochi's direct pumping.
The tanginess and the tingling sensation that lingers in the throat is just too much!
5.00 KThe first touch is naturally gaseous.
Then acidity, bitterness, a little sweetness, and a nice finish that quickly disappears as the gasiness fades away.
The overall taste is like a grapefruit sour, although the umami has a sake-like quality.
Dangerous to drink like a sour!
4.50 KFloral but mellow aroma with a strong umami.
Sweet and delicious as is typical of Shinshu Kamerei, but with a rich Yamadanishiki-like flavor that is distinctly different from other sake rice from Nagano.
It is expressed without sacrificing any of the Shinshu Kamerei character.
How light the aftertaste is!
We would love to have a bottle at our house next year!
4.75
But what a luxurious day! KThe acidity that I have felt in Shinmasa so far is quite restrained, giving the impression of beautiful sweetness.
+ Too clean to be considered a locally brewed sake, too good to be enjoyed alone as a food sake.
(No, it can't be called a locally brewed sake with a rice polishing ratio of 30%, can it?
However, I never thought I would be able to drink Sato Ubei at a time like this!
4.75 K(Right photo)
The yoghurt-like acidity typical of mizu-hashiroshi precedes the taste, and it is not as floral as expected for Aizan.
It has more umami than Shunyo, and the aftertaste is also more typical of sake, but it is still a bit lacking for Aizan.
I guess Amefall is basically a refreshing fruity type of sake.
4.25 K(Left photo)
Nigori sake with a fresh, muscat-like acidity.
The mild sweetness that remains from start to finish enhances the lingering acidity that gradually disappears after the rather strong sourness at the entrance.
A truly refreshing yet satisfying sake, good to drink during this hot season!
Highly recommended!
4.75 K(Left photo)
Beautiful, gentle, fruity aroma and gentle taste, just like a high quality sake.
Beautiful sweetness and smoothness.
But when I saw the price, my eyeballs popped out!
(Thank you for the opportunity to try it at a reasonable price)
4.00 K(Right photo)
Sweet and juicy, but with Omachi-like richness and bitterness.
Therefore, the pineapple flavor is less pronounced than Yamadanishiki.
I personally rate it lower than Yamadanishiki because I don't like the Omachi-like feeling, but it still has no heaviness at all!
The aftertaste is wonderful, with the bitterness giving it a sharp edge.
4.50 さつゆうFinished a little early, so went to Shimada Uhei Shoten. (All you can drink 3)

Noooooooooooooooooooooooooooooooooooooooooooooooooo! It's so good!
Aromatic and full of flavor in the mouth. The slight heaviness of the raw sake is just right for now!
Hanaabi awesome 😁😘. ma-ki-Hi there, Sasuyuu-san!
It sounds like a fun way to stop by and have a bite 🎵.
The live post is also an awesome lineup and a delicious review 🤤!
Oh I'm in the mood for something to drink today 😁✨✨. さつゆうI finished a little early, so I went to Shimada Uhei Shoten. (All you can drink 2)
Next, Mimuro Sugi-san.
This is the first time for me to drink here!
This is also my first time to drink!
Well, kooooo!
It has a melon and a pineapple taste!
This is sooooooooooooooooooo good!
The sweetness is strong and the alcohol content is only 13%, so it's easy to drink and sip!
Unfortunately, the glass wasn't even half full, but I'm happy!
Oh, I finished it while I was typing this 💦😂. さつゆうFinished a little early, so went to Shimada Uhei Shoten. (All you can drink 2)

Oh, I finished it while I was typing this 💦😂. まつちよGood evening, Mr. Satsyuu!
Shimada Uhei-san is the parent company of Ameuri, but now they also sell other kinds of sake as well! I was surprised to see that 🙄.
That's what surprised me😊. さつゆうHello, Matsuchiyo-san!
I was surprised to see a variety of rare sake on the shelf 🫢I talked to the owner and it seems that he is going to buy some ☺️ I hope to see more in the future! さつゆうI finished a little early, so I went to Shimada Uhei Shoten. (All you can drink 1)
This place offers 60 minutes of all-you-can-drink sake, which changes daily! I've been wanting to go there for a while, and finally I was able to stop by!
The first drink was a Niimasa.
I can only drink one glass of Shinmasa, but it's a miracle that I can. ☺️☺️
Yay!
Well, well, well, the first sip, yummmmmm! Yummmmeeee! Amazing, Niimasa-san! Kuu😙I think this is the kind of sake that even people who don't like sake will say, oh, this is delicious. It's the best 😋. ジェイ&ノビィHello, Mr. Sato Ubei 😃.
I just wandered by and had an all-you-can-drink, Akita-only Sato Ubei ‼️😳I'm so lucky to have this 🤗.
I'd love to try it 😋🥹. さつゆうHi Jay & Nobby!
I had never seen it before either 🫢I know it was an Akita exclusive 🫢I know it's hard to find since it's Shinmasa, but the owner said he got it from a friend of his 🧐I see what you mean. まつちよI imagined it would be a sweet and sour sake🍶 because of the stylish bottle claiming to use malic acid yeast and the delicious apple🍎 label, but it was more like a cider made with cloudy Fuji apple juice and I did not feel much acidity.
I looked it up and found that it has an acidity of 1.4.
I was expecting sweet and sour... 🍎.
Maybe it's good for those who like muddled type Fuji apple juice 🤔.
I wonder if the stylish bottle is for the overseas market.
*Correction: I checked again and I was wrong about the acidity being 3.0.
It wasn't sour at all 🤔. RecommendedContentsSectionView.title
