Absolutely one of my favorite sake. It is robust but easy to drink, smooth but interesting, rice like but with a great deal of umami. I love this one and will be searching for it in bottle before I leave Fukushima.

When I saw the pop-up saying "the second Tobiroki", I thought "no way, no way, no way", but since Suehiro was more of a classic, my expectations were about halfway there, but I was firmly betrayed in a good way!
(I've never had Tobiroki though 😓)
(I've never had Tobiroki before, though 🙂 ). (I've never had Tobiroki before ) The aroma was a bit harsh, but the taste was modern sweet and tasty, with a Fukushima-like flavor and a nice sharpness that kept me pouring the next one!
I have a feeling this one will be very popular 🙄.

Little aroma on opening the bottle. Some sawdust smell makes me a little uneasy.
When you put it in your mouth, it is sweet and sour. The aroma of apple and sweetness is strong and rich.
The acidity gives it a nice sharpness. There is almost no bitterness.
It is honestly delicious. The sawdust smell is not bothersome when drinking.
When used as a food sake, the bitterness can be felt a little, but it is not bothersome.
It is attractive for its good balance that you can drink it alone without getting tired of it.

It has a fresh gaseous taste while being fire-aged.

The bitterness is slight and the sweetness and spiciness are sweet. It is sweet but finishes nicely. It is sweet, but it goes down beautifully.
It is an austere label, but recommended for those who like modern sweet and tasty.
The chairman of the company advertises the birth of the second Tobiroki on a signboard in the sanctuary, but Genzai is a sweet sake, so it is not a Tobiroki-like sake. Perhaps it is more like Tobiroki on a different level.
