Purchased at the Straits Observation Museum on Shimanami Kaido when returning home at the end of the year🚗.
The rice used is 100% Matsuyama Mitsui from Ehime🌾.
The top aroma is of a high quality, with a 🍍-like ginjo aroma, and when you drink it, it is gorgeous and fruity🍍, with a slightly light and refreshing finish that fades out with the mild rice flavor and acidity😋.
The finish is a quick snap with the acidity, especially good paired with seafood 😊.
It is written that it is light, crisp, and dry, and it is true that the dryness comes at first, but soon nothing is tasted and I feel like I want a little more aftertaste.

This junmai daiginjo is made with Ehime Sakurahime yeast Type-4 and brewed using the "mizumoto" method from the Muromachi period (1336-1573).
The top aroma is slightly fruity, very soft to drink, with gentle acidity, mild sweetness, and a beautiful sharpness without much alcohydrates 😋.
We enjoyed it with Matsuyama chicken 🍶 We hope to enjoy a variety of 🍶 next year!

Today, New Year's Eve, we had this sake at shinsaku3 parents' house @ Aichi 😋.
I bought it at Yagi Sake Brewery.
It is delicious 😋.
Between dry and umami, a good mix of both!
Strong rummy taste and a silky feeling that lingers on the tongue.
It was served chilled.
