This sake utilizes "malolactic fermentation (MLF)" technology, which converts malic acid into lactic acid, and is the first sake utilizing this technology to be commercialized in Japan (and the world). It was fruity, tangy, and delicious!
Today my wife is back home in Fukuoka for my niece's wedding, so I'm alone and open a bottle of this sake that I love: 💁♂️
Let's get started. The nose has an aroma of rice ears and a touch of alcohol. In the mouth, it has a soft sweetness, a moderate citrusy acidity that escapes through the nose, and finally an umami and slightly bitter aftertaste that leaves you with a clean and refreshing finish. It is a sake that reminds me of autumn 🍶🍂😁.
With sashimi of tuna. This time I tried the sashimi with Iwate dashio (salt). Delicious❗️😳The flavor increased‼️ and also the mouthfeel of this sake itself became smoother and sweeter while balancing the acidity. Best 😊🎇.

Good evening, Komacchan 😃.
Enjoy your alone time with your favorite sake 🤗
Yay, but the sashimi of tuna looks so delicious 😍salted 🤩That takes the tasty sashimi up a notch 😙.
Good morning, Jay & Nobby. I think a simple salt can reveal the freshness and flavor of the fish more 😁I especially recommend Iwate dashio (salt from Iwate Prefecture).
It's easy to drink.
I think the best way to describe it is that it's heavy but light at the same time.
If you like sweet sake, it can be used as either an aperitif or a snack sake. If you like sweet sake, it can be used as either an aperitif or a snack.
Autumn
The hardness is a little impressive on the first day,
The taste gradually becomes milder and milder.
Like Hirotogawa, it is an autumn sake that cannot be missed 😋.
This is a confident work that bears the Yamagata signature of the "Yamagata Masamune" name! The taste is full of rice flavor and elegant fruitiness. The lingering taste has the crispness of the famous "Yamagata Masamune". A well-balanced autumn sake that never misses the mark!
Sake rice is 100% Yamagata Prefecture's Izuwasanbaku, rice polishing ratio 60%, and yeast is undisclosed.
We had it well chilled ✨✨.
Yummmm 🤣!
After taking it into the mouth, you can feel the fruity sweetness! There is also a moderate acidity and bitterness, and the impression is that it disappears nicely👍.
The impression is similar to the instrumental Masamune I drank one time before.
We paired it with potato salad, wasabi-pickled yams, and boiled conger eel! This sake is easy to pair with food and is a good match!
1.8L, 3,960 yen, 16% alcohol by volume, 100% Omachi from Okayama Prefecture, 55% rice polishing ratio, Sake degree +2, Acidity 1.6, purchased on Sunday at Mirokuya in Hachinohe City. When opening the bottle, the gasiness is so strong that if you do not open the bottle while holding the lid down, the gas will fly out. It is clear, but because of the gassy feeling, you can also feel the dryness, but the dryness is weak and sharp. What should I try next 🤔?
