The taste is very tangy. The tanginess works well when it is cold, but it also has a nice tanginess when it is at room temperature. Delicious. I heated a small amount to try it out and it brought out the sweetness.

We opened a bottle of Yamagata Masamune from Koriyama Izumiya's hanpukai.
The trinity of sweetness, umami, and acidity is so delicious! It has a wonderful sharpness and you can drink it all the time.
Entsuji Temple is famous for its garden, and I was healed by the moss and grove of trees. I would like to visit again in the fall when it is illuminated!

Spending a relaxing day ⛱️ today, I picked up some seafood that I bought in Miyako yesterday and had a drink.
Let's start with the standing aroma. I smelled apple, a little ear of rice, and a touch of alcohol.
When you take a sip, there is a bit of a sharp acidity at first, followed by a juicy, refreshing mouthfeel with umami and a sharpness that is perfect for hot summer days.
First, it is served with grilled dried flounder with butter. The concentrated flavor of the flounder and the light saltiness and richness of the butter further enhances the flavor and goes well with this sake 😁👍.
Next, we served it with stir-fried squid with garlic mayonnaise. I think the Yamagata Masamune goes better with dried flounder🙆It is delicious with squid, but I think the flavor of the sake comes out a little too much. It's just a matter of balance 😄.
