I ordered local sake, chicken motsu & soba 😁.
We started with the sake 🍶.
Umami, astringency, and delayed sweetness.
Thick and responsive taste 💪, perhaps due to preconceived notions of omachi & yamahai.
I felt the astringent taste in the middle to the end, and it went very well with the chicken motsu without losing its flavor 😚.
I'm going to match it with soba noodles 😁.
The astringency disappears and the taste becomes sweet and delicious 😳

HAN Summer Junmai Ginjo
Aroma is a mixture of isocap & alcohol smell 🍍🍌.
I thought the sweetness on the palate was a thick mango type of sweetness, but it was cleared up by a rather strong acidity in the middle! 🥭🍌
