This is mainly my impression after one week of opening the bottle.
About the aroma
Immediately after opening the bottle, the aroma was pear-like, but after one week, it had a rich, matured aroma of melon and cheese.
The ripeness of the aroma became dominant, and the peariness was not so much felt.
About the taste
The taste is mainly a rich, ripe, slightly sour taste like melon and cheese.
I think the acidity and ripeness are slightly more dominant than the sweetness.
However, the sweetness is not overpowered by the richness of the flavor.
The sweetness has increased from just after opening the bottle, and the lingering sweetness and aftertaste seem to have lengthened.
The aftertaste continues to be cheesy, and the bitterness remains at the end.
The overall taste is richer, and the carbonation is still there even a week after the bottle was opened.
It is much richer than the Orange Sea, which I drank at the same time.
I am not so sure about the taste and aroma, so if you are interested in this sake, please take a look at other people's postings.

I got it on a previous side trip to the Holy Land!
It's been a year since I've had a Kangiku and a few months since I've had a Sake Mirai type, so by all means. I will enjoy it to my heart's content 🔥.
When I opened the bottle and poured it, the aroma was fruity and refreshing, with hints of apples, pears, grapes, and tropical fruits.
The palate is so clear that the words "pure and innocent" come to mind.
The floral and aromatic aroma is accompanied by a thick, almost sugary sweetness.
However, it is not too sweet, and the lightness of the gasiness and acidity, and the sharp cut-off of the dry astringency is even beautiful!
It is a true gem, no less than the Kenaiyama we had last year ✨.
This is one that I picked up after having a hard time deciding between other brands.

Kangiku Meikozo Kenaiyama
Even though it's an Aizan, it's cheap at 4,000 yen for a bottle, so we bought a bottle without hesitation!
It is a rare Kangiku sake that is once-fired, so it doesn't have the freshness of a fresh sake, but it has a good balance of sweet and tasty!

Sake that I have been saving for about 2 months.
Started drinking at 15°c.
As soon as the cover is opened, the cork almost flies off.
Aroma is a mixture of pear and rice.
Slightly fizzy and lightly cloudy.
