I had some Kangiku in stock at home and was going to hold off at the store, but I thought it would probably be my junior's favorite taste, so I chose it. (The stock is not Denshogiku, so no cans 💦)
The mouthfeel had a good balance of sweetness and acidity, and the lingering aftertaste was nicely balanced by the chiri-chiri-chiri-chiri-gassiness.
My younger colleague was also impressed with the taste.

This is a special limited edition of Kangiku Kenaiyama's special order product.
While the nationally distributed product is an "unfiltered, once-fired, raw sake," this limited edition is a "Nakadori, unfiltered, raw sake.
It is sold exclusively at Yajima Sake Shop and features the Yajima Sake Shop symbol on the neck label.
It is rare to have the opportunity to taste the same sake at the same time, so we compared them side by side.
First, we tasted blind. We prepared two identical glasses, wrote "Nama" and "Hi" on masking tape and stuck them on the back of the plates, poured equal amounts, and shuffled them around to compare.
Of course, the taste and aroma were the same in general, but there were differences at the point of aroma before drinking, and I was able to guess each one with little hesitation.
The aroma is a little more floral and sweeter in the raw version. When I drank it, I found the fire-aged one to be somewhat crisp and refreshing, while the raw one tasted more juicy and sweet.
However, the raw version also has a crispness that is more transparent than the other Kangiku, so it seems that the crispness felt when drinking the hi-ire version is not only due to the hi-ire process.
It was a valuable experience to realize how the flavor changes with or without hi-ire.

Kangiku Silver Lining 2024 Junmai Daiginjo Unfiltered Nama-shu
This is a very limited edition sake made by polishing the sake rice So no Mai to 29%. Recently, Kangiku has become a popular brand, and if you do not buy it within a week of its release date, it will soon sell out. If you visit liquor stores carefully, you may find it in the back of the refrigerator, so it is not to be underestimated.
It has a gorgeous sweet aroma that is typical of Kangiku and is enchanting. The sake is -6 degrees Sake, so it has a strong sweetness that disappears without any unpleasant taste. It is indeed a delicious sake.

The nose is sweet and has a ginjo aroma that tickles the nostrils. In the mouth, a slight gasiness and sweet umami spreads, and finally a refreshing aftertaste with bitterness. It can be enjoyed on its own🆗🙆.
Serve with creamed Chinese cabbage. The richness of the cream and the flavor of the Chinese cabbage and mushrooms bring out the sweet and umami of this sake even more than I expected. I think they go well together 😋.

The label may be monochrome, but it is still Kangiku. It is rich in flavor and delicious 🤣.

The aroma is gently sweet. The fizz is strong, and there is a strong stimulation in the mouth. There is a gentle sweetness, but no sourness, and the bitterness comes later. A strange sensation that quickly disappears from the mouth. It is refreshing and has an overwhelming carbonation that I have never felt before.
