Kure Junmai-shu

This was my first visit to Nishioka Sake Brewery, which brews Kure. It was one of the purposes of my trip to Kochi.
Since I was there, I bought a bottle.
It is a good dry sake!
The bitterness is strong, but it is a nice accent.
Kurei is juicy on the raw side, but I got the impression that the hi-ire version is orthodox and dry.
It is also good when heated up, as the dryness increases.

Third glass is Kure 😁.
This is a brewery that I drink a lot ✨.
I love the spicy flavor ✨😁.
By the way, this label of Kure is not sold locally 😅.
So the owner of the store brought it from outside of the prefecture 😁.
Kochi sake, which has been a great help to us during our long expedition this year. We opened a bottle of "Kure" hiyaoroshi, which we came across at a local liquor store.
The first sip had a beautiful umami that spread after the acidity that tightened up the mouth. As the temperature drops, a friendly soft umami comes out, making it easy to pair with food as a mid-meal sake.
A bottle that makes me look forward to my expedition to Kochi. Delicious: ❗️
It is made from 100% sake rice called "Gin-no-Yume" produced in Kochi Prefecture, and the yeast used is Kochi yeast. The sake is slightly dry with a sake strength of +5 and a high alcohol content of 17 degrees. It has a fruity aroma.
Let's try it!
Oh, this is very strong! It has a robust flavor. The acidity also makes it very drinkable. ‼️
It is a sake to be savored slowly rather than gulping it down. Enjoy long autumn nights while listening to the sound of insects.
I recommend it. ‼️
Saturday's opening🤭.
When opened, the aroma of the same CEL24 yeast as Kameizumi is still the same ❗️
But still......it's not the same!
The aroma is almost the same, and when you take a sip, it's not similar...at all! It's not a raw sake... 😨.
Of course it doesn't have the piquancy because it's not a pure sake, but this Kurei is more of a umami type of sake for a meal. ❗️
I think the sweetness is about the same, so the range of dishes it can be paired with is quite selective...hmmm...maybe a light salted edamame (🫛) wouldn't interfere with it😅.
It's the same CEL24 but totally different from Turtle 🐢.
It's delicious, but it's hard to judge this one, it's a bit of a mixed bag 😓.
Is it a food wine or a fruity after-dinner drink...I think I'm in the middle of the two 💦.
I'm sure Kurei-san is more of the former, so...hmmm....
Day 2 report 📝.
Sweetness! I don't know if it's more sweetness or more umami...it just seems sweeter than the first day....
